I bought it from Sterling Goss in Logan Square, and it was easily the best turkey I’ve ever had. I decided to spatchcock it(check out the Serious Eats blog for directions), and my 16 lb bird cooked to perfection in 2 hours.

I love Howard Kauffman’s Turkey Farm. I once made the front page of the local paper with Mr. Kauffman, petting one of his turkeys. I was 5. Now, I’m older than 5 and don’t eat meat. Kinda ironic. But, my family all loves Ho-Ka turkeys… and the farm still makes me nostalgic for my carnivore days.
