This guy was superb. Extremely meticulous, intriguing, intricate, & effective. The bar itself reminded me a bit of bars in Japan: clean & skillful. But this one had music. The cocktail bars I went to in Japan were mostly silent. No music accompaniment. They made sure you absorbed your drink physically, mentally, emotionally, and socially. Hot damn. This guy here? He was so good. I really liked him. Music & all. I soooo want to come back. Classics or specialities being made? This guy is THE man to do it. Hands down.

A small and cozy Japanese whisky bar in Tsim Sha Tsui, near the shopping mall K11. Around 20 seats total including the bar chairs. Comfortable and quiet with no noisy music. A nice place to relax with friends after work; also suitable for couples. There is a wide variety of Scotch, Japanese whisky and cocktails. They got Scotch like Scapa and Caol Ila which are not very commonly seen in bars in the area. The price is reasonable, most of them are of around HK$ 100 for a single shot. We arrived around 1030, after dinner in a restaurant nearby. It was our first visit and the experience is nice. We were served by a Japanese bartender who is friendly and helpful. We had some beer, whisky and cocktails: Suntory Premium Malt on tap, B+ Creamy and rich. Of course much fresher than the bottle /can one. Hong Kong Cooler, A-: A vodka based cocktail with some citrus, ginger ale and … jasmine tea? A very refreshing drink. Scotch Manhattan, A(*caution: this grading is only suitable for Islay lovers. Forget it if you hate peaty stuff): The bartender recommended this when I told him I love Islay and wanted a strong cocktail. Basically Ardberg 10 with Vermouth. The peaty Ardberg and the sweet vermouth match perfectly. One of the best cocktails I have ever tried.

If you’ve been to Bar Executive in Causeway Bay, you would also appreciate Bar Buonasera however it is a little out of the ways rather than in central and easy to locate places like causeway bay. Situated in Tsim Sha Tsui, on the 7th floor of the Mody House Building is a Japanese whiskey bar called Bar Buonasera. It’s a small space with about seating for 15 – 20 people max. What’s most appealing about this place is the bartender and also owner, Hideo Morikawa. I had the pleasure of meeting him when my friend introduced me while we sat at the bar and waited for him to make us drinks. There is a slight emphasis on the wait part. Usually, he works by himself, so customers are inclined to wait until he comes around, takes your order and makes your drink. This isn’t the place to get quick drinks before your next stop of more drinking. Rather it’s the place if you prefer a quiet atmosphere, with a friend or even by yourself to think, and enjoy watching Hideo make your drinks. We sat at the bar so I watched for the first time, Hideo make drinks for us. To be honest, I’ve never seen such a passionate way of making drinks before. While he shakes your drink, you can see him listening to the ice cubes. He does it like he’s dancing and he has his eyes closed. When he was serving me my drink, I ordered the California lemon,(It was whiskey, soda water and lemon juice) I asked him what he was listening to or if he was even listening for that matter. He said yes, he was listening to the melting of the ices with the liquor and feeling the temperature with his hand. He does it so artistically that you might just keep ordering to watch him make his drinks. Like a lot of Japanese people I know, a craft is repeated over and over again until it is mastered. Hideo Definitely looks to be this way. I am very happy I got to come here. Plus the drinks were half the price of Bar Executive. Not complaining about that. Be sure to give Hideo a call before you come. It gets at capacity quite often. I recommend the California Lemon and the tomato Liquor. Very good. Also try out their limited edition Japanese Whiskies.
