The only thing which tops these ribs, Hot out of the oven and very Moist while easily peel off the bone bursting with flavor ribs, is the homemade sauce which comes with them! This sauce was absolutely an unexpected surprise. Seems any BBQ joint can make or order in a sweet sauce but Big Bad BBQ delights with a sauce that raises the bar and kicks some spice which in no way leaves an after burn. Nice Perfection! Appears that Chefs, Austin and special created sauces go hand in hand and these(very tall!) two brothers do not let you down in any way, including the hospitality and price. You can tell they are seriously prideful in what they do. What a nice location which is clean and comfortable. We along with others who happened to ordered while we were there were made to feel like family. It was fun listening to there excitement as they started eating and tasting. Price was nice to boot. Cannot wait to go back and try the Chicken Sandwich with special made white sauce and the Brisket although I know I will want some RIBS because they were top shelf perfection! AWESOME! Seriously, I won’t go for BBQ anywhere else in Austin. There were a bunch of us and we got to sample quite a few items. The pulled pork sandwich was soo good but i have to say my favorite sandwich was the chicken with the white bbq sauce. Yummm! The coleslaw was THEBEST I have ever had. The green beans were great too. So was the potato salad. We loved the ribs and the sausage. The BBQ sauce is perfection! We went late in the day and the moist brisket and french fries were already sold out so next time we will get there before everyone else! I just gotta try it all! Considering how delicious everything else was, I bet they’re just as good! And to top it off they serve great cupcakes(and I’m an expert at cake!). My recommendation… Go with lotsa people so you can taste everything!!! You won’t want to miss one thing! Oh, and all the other customers around us loved their food too! Way to go Big Bad BBQ! We will be back soon!

Took my parents who are from out of town and we all loved it! I highly recommend the sausage, ribs, coleslaw and green beans. The coleslaw is by far the best coleslaw I have ever had! The cupcakes are moist and have the perfect frosting to cake ratio. Wonderful cupcake flavors! Great service! Will be back again and again!

Hmmm, where to begin. I like my brisket hot and falling to pieces when I touch it with my fork and sauce should just be something that enhances the already smoky flavor of the meat. This trailer disappointed me on many levels. 1. The brisket was room temperature, if not a little colder. 2. My husband got the pulled pork. He said it was cold and he had to use a knife to cut it in some places. Note, I said ‘pulled pork’ here. 3. I’m not sure what ‘Memphis-Texas’ fusion is, but my brisket lacked a distinctive smoke ring and, let’s be honest, I used my hands to eat it because it in no way fell apart. 4. Sides. I was already sad because the green chile Mac and cheese was on the menu but they only serve it on Saturdays. So, I opted for the potato salad. Meh. It was dry, plain, flavorless. I’ll end of a good note… The sauce was really good. I used it to eat my sad, sad meal. Spicy, flavorful. The only thing I would recommend on the menu. So two stars for the sauce, ease of parking, and my dog ate half my meal. She loved it. We came. We tried. There are multiple better options…

If you are opening a new food trailer in a heavily saturated food trailer market, you’re brave. If your new food trailer is selling barbecue in Austin, then you, sir or madam, have gigantic effing balls. I stopped by at the newly opened Big Bad Bar-B-Que food trailer today in what I’m assuming is still a soft opening period. It was past noon, but there was absolutely no line. In fact, I may have even been their first customer of the day. I went for two of the holy trinity of Texas BBQ: Brisket and sausage. First impressions of the brisket, very nice color and texture for lean cut.(This is what I was given based on the cook’s recommendation.) There was a nice touch of smokey flavor, but overall it was lacking depth. Most surprising, the bark(my favorite part of a great brisket) had almost no flavor at all. I did a bit of sleuthing and found this directly from the Big Bad’s website: «…if all you like is salt and pepper than(sic) go to any other BBQ joint in Central Texas. This is BBQ with attitude!» This is sort of worrisome for me on two levels: 1) I’m a firm believer that salt and pepper are the basis of ALL great BBQ. It’s important because it enhances the flavor of the meat without distraction. Why go against this if your method is clearly not better? 2) «BBQ with attitude?» Ugh. On to the sausage. I liked the snappy case, but it was a tad on the salty side. Still, nice flavor and more of a finer grind than what’s become popular recently. I was saddened to learn that is not made in-house but sourced from New Braunfels. I’m sort of baffled by this. Why sell a product that you don’t make? I mean, I get it. Making sausage is an arduous, time consuming process, but isn’t that exactly why you open a BBQ restaurant in the first place? To showcase your talents? The only winner for me today was the BBQ sauce, which was very tangy and peppery. It was absolutely excellent and some of the best I’ve had in recent memory. Overall, three stars for me. The bar for great smoked meats in Central Texas has been raised quite significantly over just the past few years, so it’s natural that everyone should have very high expectations when a newcomer arrives. Big Bad Bar-B-Que isn’t bad by any means, but it’s literally and figuratively miles from the quality of a John Mueller or La Barbecue.
