Not the same without Special K running this place. Good was a lot better under her ownership. Place has gone down hill.

Heard about the«best salsa» in the world from a «friend» who passed thru about a month ago. Took my family in for a meal so excited for some good food and great salsa. Bottom line 95% of our food went into the grey bus your own grey box! Waste of money, time, and life! I do not recommend what so ever! I could Go on, but won’t waste anymore time. This place needs help, owner should be ashamed!

Went to eat here a few days ago, the cashier was really nice and the place looked alright, but the food was not good at all. The first time I ate a fish burrito, it had no taste and it had some gross white sauce on it, it was also cold! I decided to try it again today and ordered a chorizo burrito, it was not what I’m used to when they said they added veggies but I wanted to try it. One my first bite I couldn’t chew on something, so I picked it out, I don’t know what it was. It looked plasticky and the sauce was dripping and it grosses me out, I couldn’t even take another bite of this burrito! This is probably one of the worst food experiences I’ve had.

This place is a cross between a fast food joint and a sit down establishment. It is similar to Taco Bell with its quick, greasy-spoon tacos, burritos and enchiladas. On the flip side, the restaurant serves beer and combo platters. Plus, there is an outdoor patio decorated with hanging baskets of colorful impatiens where you can enjoy your meal during the beautiful summer months. Unfortunately, the patio overlooks a rough street. The inside dining area seems dark and cheesy parrots and cheap paper picados(banners) grace the walls. You’re expected to bus your own table after finishing your meal. The good news is the place is open late, will prepare your food to go, and takes credit cards. It is also nice to know you can toss back a few beers with your meal. However you should note, you can’t take the alcohol to go. There is an irregular shaped driveway and parking spaces. I recommend parking deeper in the lot to avoid the possibility of someone bumping into you as they enter/exit the tar lot. I could see returning here to indulge in some cheap, late night flautas for those nights when I don’t want to cook. One thing I do love about this local, family-owned business is their support for animal welfare and the Whatcom Humane Society. For that alone, I would be willing to return.

I really used to like this place, especially the squeeze bottle of sauce on the table. They should bottle and sell that stuff. The last couple of times I’ve come, I’ve noticed a different feel, kind of like new owners. I went into today and ordered two chicken tacos and a grapefruit margarita. The first taco was tasty but the second one was a beef taco on a hard shell, something I would never order. When I ordered, I was the only person in there so no excuse for getting it wrong. The food was pretty good though. The margarita was, in my humble opinion, not even a margarita. It was so sweet and lacked any of the flavors I normally associate with a margarita. I hope they can get it together.

I was just passing through Bellingham and stumbled upon Diego’s. As of my review, three stars is misleading. If you ordered what I did, shredded pork enchilada and chili relleno with rice and exceptional beans, you would be smiling a five-star grin. Common Unilocalers.

Pretty good. If I had nothing to compare it to, I would give it four stars. Standard burrito, good size, good customer service, and quick, but really pricey. I prefer Taco Del Mar because there is more flavor and it doesn’t cost as much.

I had the best Chile relleno burrito of my life at Diego’s! My boyfriend enjoyed his Carne Asada also. My only issue was that the paper it was wrapped in stuck to the tortilla badly. The salsa was also quite amazing! We are from San Diego so I was pleasantly surprised by finding great burritos in Bellingham.

The food here tastes dirty and spoiled. I ordered the chicken burrito with shredded chicken and it tasted like the chicken was dirty and old. My boyfriend’s steak burrito tasted like seasoned garbage. The environment is also less than desirable. The outdoor seating is decked with uncomfortable patio furniture and offers a front row view to the happenings of bellingham’s former(current) red light district. I would not eat here again.

I have now eaten here a couple of times and I will not be going back. First off they forgot my chips. The carne asada tacos were mostly lettuce. The rice was very bland and the beans were under cooked. I could have gone to a nice sit down restaurant and got two lunch specials for what I paid at Diegos.

Being a chef and from Southern California I know my mexican food, and I really didn’t expect to find good mexican food in Northern Wa. Imagine my surprise to find not just good, but great Mexican food and from a truck. I credit the authentic flavor to ultra fresh, premium ingredients in the hands of a gifted pro, Chef Brian, this guy really knows mexican cuisine. I have not been to Diego’se restaurant, but this little taco truck has the best dam fish tacos north of San Diego!

Ok. I’m not sure how this place doesn’t have higher ratings but I am telling you, it should! Not the most ideal location(Samish Way) but it does have a lovely patio that I look forward to checking out some day! Now to the food– Fish Tacos were AMAZING! Seriously the best fish tacos I have had except for when in Hawaii. The salsa was spicy and delicious as were the chips. However, do yourself a favor and skip the rice and beans all together. So not worth it! Both are disgusting. However, the fish tacos and the chips and salsa make up for it! Customer service was great and received my to go order really quickly! Will definitely go here again!

Ordered the Carne asada burrito. It should be called the lettuce burrito. Probably the worst burrito I’ve had in bellingham. For the price, I was expecting better. That’s what I get for wanting to try something new. I should have gone to taco lobo. Even taco del mar would have beat the burrito I got.

There are many things that are right with Diego’s. First, the outdoor patio is wonderful. It is festive and comfortable even if it is on a busy street. They also seem to take pride in the ingredients that they use and the staff is very friendly and helpful. The problem is that the food is a bit hit and miss. We arrived at noon and The Wife ordered the Fish Tacos while I had the Machaca with Eggs. The Wife enjoyed the Alaskan Cod but found the tortillas a bit stale tasting. I thought the Machaca was a great value but I too found the tortillas stale. We both agreed that the beans and rice weren’t quite right as well. The beans weren’t seasoned at all and the rice was a bit under cooked and crunchy as well as also lacking in seasoning. Thankfully, the spicy salsa helped to some degree. Was it good enough for a return? Maybe on a sunny day when the patio can be used but I might look elsewhere if it is raining.

I didn’t realize that Diego’s is an actual restaurant. I actually tried Diego’s Burritos food truck on a recent visit to Kulshan Brewery. I’m not sure when and where they usually are, but I thought the whole set-up they had there was great. You could order a beer at the brewery and grab some food from Diego’s. A lot of people were eating burritos, which looked good but massive. They had quite an extensive menu for a food truck, though, so I opted for two tacos($ 4 each). The fish taco is made of battered Alaskan cod — delicious. And it turned out to be too much food, but apparently, the shredded beef taco is one of their most popular, so I ordered one of those as well. Coming from Vancouver, I realize I have quite low expectations of Mexican food(we are a severely deprived city for that), but both were better than your average restaurant for me. They’re not an authentic Mexican cantina(no grandmas hiding in the back), but very solid fresh ingredients in generous portions and a warm friendly staff.

We had food from Diego’s Mexican grill while at Boundary Bay Brewery & Bistro The food came from a food trailer, and it was great. We tried carnitas and fish tacos, and both were good. I’m not sure it’s always there, but while the food truck is at Boundary Bay, one just goes next door to get a beer, and it’s a good combination. Bellingham will probably have more food stands(following Portland’s lead), and it’s a very good think. Good food cheap, and in a way that supports the community. BTW, lots of folks arrived there by bicycle — we almost felt out of place arriving by car. I’m a fan.
