The best Indian food in Bellingham, no question. The perfect blend of spices, not overdone, just right. Too often, all Indian food is equated with southern Indian regions or the Punjab, not recognizing that all regions have their own cuisine and tastes. The owners of Simmering Tava are from Gujarat which has some of the best and most delicately spiced dishes in India. I am so happy to find this wonderful food! Recommended, recommended, highly recommended!

Today at the Saturday Market Simmering Tava was calling my name. I’m sure glad it did! I got a small chicken curry with rice for $ 6. The«small» dish is quite small consisting of mostly basmati rice and sauce but that was ok only because the curry was absolutely fresh and delicious! I wish there was a little bit more chicken in the small but you may have to order a medium or large for more protein… I can’t wait to try another dish from here!

The chicken vindaloo is amazing! Portions are a bit smaller than most people are used to. But you can order small medium or large depending on how hungry you are. But the flavor is epic.

Somebody at the farmers market cruised by me with a delicious-looking hoagie in her hand. When asked, she was quick to smile in delight, point to the Tava tent and praise the flavor of her sandwich. She mentioned the place had sold out of a few dishes and had ran out of the naan wraps, so they were using hoagie bread as a substitution. I high-tailed it there and spoke with the owner and his family who talked about the long hours and labor of love he had put into slow cooking the chicken. He also mentioned the wonderful organic ingredients he used in all of his dishes. It was indeed a magnificent mix of flavors when I sunk my teeth into one of his creations. Although the hoagie bread was not traditional, I thoroughly enjoyed the combination of east meets west.

This place sets up at the farmer’s market, the owners were really nice and the chai was nice. The fritters were ok but I did not enjoy the chicken. Edit: I confused them with the other horrible indian food at the farmer’s market.
