WARNING: THEYDONOTSERVEPIE. I actually am not sure if they serve any deserts at all. That being said, Project pie provides decent customization pizzas for a great price. They allow you to pick toppings and even the base sauce. I actually picked a garlic sauce instead of the typical marinara and it was a great choice. I will definitely return and it’s absolutely worth a try.

Who could not like fresh, made-to-order(funky as you desire) pizzas that are totally decently priced? Oh and pile on those toppings! No extra charge. This is my first visit and I’m hooked. Superb pizza, fresh tastes, and very personable, helpful, kind people manning that fire oven. If you’re craving an amazing pie with personality, this is your place!

I feel bad only doing 2 stars, but it really is just a blah pie. The concept is great, pre-thought out pies or make your own. The décor is great, and a little more warm and welcoming than other fast casual spots. The employees were friendly and knowledgable. Unfortunately, I don’t go out to eat for the décor or the knowledgable employees, they are usually just an added bonus. Now for the food, it’s great that they use fresh dough, and you can get everything you want for $ 7.85, but it’s like an all you can eat buffet. Sure, you can get 5 trips to a food buffet, but if it’s mediocre, is it worth it? The dough is super thin, like, I’m from NY and I like thincrust, this is cracker crust. The sauce was bland and seemingly canned with little to no flavor. The mozzarella was also lackluster, the other toppings were quite salty. I should mention we got 3 pies, the plain cheese, the #5, a white pizza with ricotta, Gorgonzola, parm and olive oil. As well as the #8, with prosciutto and Brussels sprouts. So I feel like it was a good cross section of their offerings. Overall, just very bland pies on a cracker crust. Fast service from friendly employees, but again, mediocre food doesn’t make me want to go back even if every other aspect of the place is spot on.

4.5 and that’s excellent for a new business! Really, I like everything about Project Pie. Because it is on the Hill, I will not be in as frequently as I would if it was downtown or in N. Boulder, but I can totally see why it is on the hill. Good place for it. It is so much fun to create a pizza with all the quality fresh ingredients provided. The results can be nothing but perfect. The ovens are right, they’ve got the timing just right for baking the pizzas, and they even have quality soda pop on tap. Very nice salads, too. And affordable prices. I loved my vegetarian pizza, and enjoyed the company of a few other Unilocal people to try this place out. Also, there’s a neat little device by the front door where you can take a photo of yourself with Project Pie in the background and post it on a variety of social media sites. I’m a bit older than the average customer here, and would have a bit of a challenge figuring this out, but my fellow Unilocalers had some fun with it! I very much recommend Project Pie…

If I could give it 2.5 stars I probably would. It is like Subway, except instead of sandwiches it’s pizza. I wasn’t too impressed with the quality of ingredients. The sausage looks like from pizza hut or some other fast food and they didn’t have a lot of fresh looking ingredients. The dough is premade and they fire it in the oven for you. One bizarre observations: the person at the assembly line took scraps of mozzarella cheese that fell on the metal counter and put it on the pizza which was a little cringeworthy. I’m sure it was clean but still kind of disturbing. Also no one wore gloves. Pros: Cheap for Boulder, fast, thin crust, I didn’t get sick Cons: Parking sucks, ingredients not impressive, Probably will not come back unless I’m desperate for something quick and in the area.

I agree with the other reviewers this place is definitely«Chipotle meets pizza». That being said they have a lot of options and extra ingredients do not cost more which is great! The people working there were very nice and the pizza was okay but nothing worth going out my way for.

Project Pie takes the assembly line concept of Chipotle and adapts it for pizza. Get a 10 inch pizza for $ 8 and add as many toppings as you like. They pop your pizza creation into the oven and its to your table in 5 minutes. The pizza crust is thin and delicious and the toppings are flavorful. Fast. Convenient. Delicious. 2 thumbs up!

This place is AMAZING! You’re telling me I can get a pizza and add as many toppings as I want!!! This is unreal. Today I basically got two pizzas in one. I did half #6(grilled chicken, red onion, cilantro, mozzarella, Gorgonzola and BBQ sauce) and half #7(prosciutto, Caramelized onions, mozzarella, and Parmesan) All I can say is WOW. Two unique flavors in one. You can’t best this! I’ll be back.

Yes, yes, I am going back. This is good pizza with a flare for fun. Build your own, tasty fresh ingredients, with so many choices, produced on a charred thin crust. Just what I want, for such a cheap price. And though it is quick serve, at least as of today, they are keeping it clean. I rebel at quick and dirty. I am not a CU student, obviously their target market, but I can walk here and eat with the masses with the best of them. And nobody even blinks when I start specifying just what I want, because it is really all about every pizza being a «special order.» My absolute only complaint is that it was unclear to me that I could have sparkling water as a drink. I did not want the unsweetened tea which also comes from the Boylan’s soda machine. If I have to have soda, Boylan’s cane sugar option is what I would take, so I did. It goes so well with pizza. But as I was leaving, I mentioned to a worker that I would love it if they had a bottled water or especially, a bottled sparkling water available. I was pleasantly informed that the Boylan’s machine does allow for a fill with just sparkling. I had not noticed the little tab under the orange soda spout. Next time. So a little piece of history to let the not so local and newly local in on. This building on the Hill used to be the finest mens’ clothier in Boulder, Kinsley and Co. It was founded in 1949, left the Hill in 2006 and closed for good in 2009. This pizza was the first thing I ever bought, or could afford to buy, from this location, formerly a «den of tweed» which I walked past for a few decades.

Wow. Yum. Great price — less than $ 8 Pick any toppings you want –unlimited Tomato or olive oil sauce. Cooked to order, yet fast. Our whole family loved it. Will defifitely be back.

Ok so this place is awesome! The minute you walk in you feel welcomed. They have 8 pizza choices or you can BUILDYOUROWN, either option is $ 7.85 excluding the cheese pizza which is only $ 6. There are numerous ingredient options… but they don’t have spinach which kind of bummed me but the pizza was great regardless. It’s cut in four and cooked in about two minutes! And as far as the drinks go they have these unique real cane sugar soda options which is pretty cool. …Oooh and they also have DESSERTS!!! We had the Nutella and Banana Pie($ 4.50) omg… like this thing is legit… umm you must try this! John who happened to be helping us was also very nice and helpful! I definitely recommend this place!

As someone who isn’t a CU student, I’m really happy about stumbling onto this awesome little place. It’s pretty much a «Chipotle but for pizza.» So that means that that this place is great. The employees are alway super friendly and the pizza has been superb each time I’ve had it. The pricing is super reasonable and the fare is quick and fresh. My hubs and I each made our own pizza. I was really impressed that they have ricotta on their topping list for no extra charge. We definitely plan on coming back before we leave Boulder. The only thing that would make this place better would be the addition of beer/wine, but they do have some fun fountain sodas. Definitely a good place to take visitors for a quick meal and I’m sure that students will love it as well.
