Stetsons is located within the Hyatt Regency Chicago hotel, but its atmosphere and food will make you forget that there is a hotel lobby right outside the doors! The restaurant is very sleek and modern with a sushi bar next to an open kitchen. It’s a little on the pricier side, but that’s expected when you’re dining in a hotel restaurant. I ordered the spicy tuna roll and Caesar salad. The spicy tuna roll was GREAT! My colleagues ordered sushi as well, and had nothing but positive things to say about their dishes. Prior to arriving at the restaurant, I read on their online menu that their Caesar was a kale Caesar, but unfortunately their print menu only had mixed greens. It was still delicious — there were two huge Parmesan crisps but I was not a fan of the actual anchovies in the salad. Would def recommend tho!

This place was very good! Overpriced for their sushi and seafood but we stayed in the hotel so it was convenient for dinner. I had a sushi roll and the seafood platter that came with scallops, crab, lobster, octopus, shrimp and sea bass. Everything was cooked perfectly!

This is conveniently located in downtown loop inside the Hyatt Hotel. It is within the walking distance Where I stayed. Dinner reservation is required. And they had to put me at sushi bar. I ordered sushi combination bowl. They are extremely fresh and tasty. I was rushing for time so I did not order a steak. The quality of the sushi is definitely top of the line, and of course it is pricey. The sushi chef is so friendly that he throw me a freebie.

You must go here if you get a chance!!! The food is excellent and Deborah is the coolest bar tender I have ever met. She took great care of me and a friend. It was a tough day at work and she convinced us to sit at the bar and chat. Wow, what a difference a fresh perspective made on our day. The food she suggested was just what we needed and it was soooooo good it took the day from a loser to a winner. The steaks were perfectly prepared and the wine was a perfect paring. I enjoyed them with sides of corn and mushrooms. The Yorkshire pudding was hard to stop eating… A nice basket of strawberries and chocolate and I was done! Thank you Deborah & Stetsons for making my day!!!

I ate at Stetsons for the first time a few weeks ago and thoroughly enjoyed it. Everything I was served was high quality and well-prepared. The waiter was friendly and attentive as well. There’s honestly not a thing I can complain about! The restaurant is off the lobby in the east building of the Hyatt Hotel complex, right up against Stetson Avenue. The bulk of its customers appear to be people staying in the hotel on business, using their expense accounts for high-end food. But I’m sure there are some locals mixed in with them. The décor is very modern informal with a nice glass fireplace in the front. My wife and I were lucky enough to be seated right next to it. They have a dedicated employee standing against the wall whose main job seems to be keeping water glasses full. The guy was almost TOOGOOD, if that’s possible. I’d take one or two sips and he was back filling me up! I almost floated away… I had the spicy shrimp and scallop roll as my appetizer. The roll was expensive at $ 22, but it was one of the best I’ve ever had and I knew full well where the extra money went. It was BIG. I’m going to call BS on the other reviewers who claim that they can get sushi like Stetsons’ at their corner grocery store. Yeah right, and I’m Lady Gaga… LOL My roll had nice thick pieces of sea scallop(the big ones, not those little bay scallops) draped over every square inch of the roll. Inside the roll were large gulf shrimp, not little diced up salad shrimp. The pieces of shrimp in my roll were a good half-inch in diameter! No freaking way they have sushi rolls like that at Whole Foods. For the main course I had the cap steak — never heard of that cut before. It was awesome, cooked a perfect medium just like I ordered and super tender. There wasn’t much marble at all, but where it was found it was melt-in-your-mouth good — just how it should be in a fine steak. I don’t know if it was the best prime steak I’ve ever had, but I can’t think of another that was better. HUGE thumbs up on the steak! I like sauces, so I asked for both the horseradish cream sauce and the bernaise sauce. Both were so savory and silky that I could practically eat spoonfuls of them without any steak at all. :) Alongside the cap steak, I chose the brussel sprouts. They weren’t just the sprouts, but also featured big cubes of butternut squash and lean maple bacon. It was sprouts on steroids, cooked perfectly. I would definitely recommend this side. Dessert was mandatory for us, so we ordered the apple pie a la mode. It was big, handmade, and wonderful. No corners were cut in any way. Stetsons gets all 5 stars from me. The food, cocktails, and service were excellent and we definitely will return.

Quite honestly the best prime rib of my life. This was night two; the first night our crew put down every type of sushi they had. I didn’t feel right reviewing that, because I’m not a sushi guy, & I couldn’t have told you if it was good sushi or bad sushi. It tasted good, but I eat such limited sushi and only from top-notch places, that I didn’t feel I could lend much insight. But I know steak. Mycut of prime rib was perfect. I have never had a less fatty cut in my life. I’m kind of surprised that they brought me a steak knife, because I could have easily cut through it with my fork. The mashed potatoes were out of this world, and the horseradish sauce was absolutely incredible. I’m not going to sugar coat it, you pay for what you get. It’s pricy. However, I do think that it was of value. Although the meals were more expensive then I would typically buy, I certainly did not feel that I overpaid.

Was in the hotel for a conference and ended up eating dinner here and was SO pleasantly surprised by the experience. If you split a salad with someone they’ll split it for you and it’s more than enough to share! Great value. The biggest surprise of the night was the ribs. They are at Louis style but waaaay more tender than you’d expect. Also they come with unique sauces(the apple one is to die for) the dry rub on them is chalked full of flavor too. Also they are a huge portion. Another easy plate to share. The steaks are great. I’d never tried a cap steak before and it was really tender and delicious. The blackened seabass was also phenomenal. So buttery and delicious. If you’re in the area this is worth checking out

This review is only about sushi. You can definitely buy sushi in a grocery store that will be same or better than those at Stetsons. Very average and very expensive. Consider going to a sushi place for sushi.

Had an 8 o’clock reservation on a saturday night. First off, our table wasn’t ready, so we waited 15 minutes, no big deal, the whole hotel lobby was busy, so had to assume that the restaurant was also busy. When it was time to order we were informed that they were out of potatoes, so neither the mashed or baked potatoes were available as a side dish. I order the spicy tuna roll($ 17, for something that usually costs $ 6 at a sushi restaurant on the list of rolls that don’t even have a picture, you know, just below the California roll), and the ribeye on the waiters recommendation. The steak was good, good flavor and cooked well, so no complaints about that. The steak was probably the only good thing about our experience. My wife ordered oysters(have had better elsewhere) and scallops(which she describes as average, but way overpriced). Then it came time for dessert, which we were then informed they were out of 2 out of the 4 options, so we passed on the 2 options that no one else wanted. Needless to say it was a $ 200 meal that dissapointed. Shouldn’t leave a steakhouse paying that price, feeling still hungry and needing to stop at the convenience store to finish off the night.

This restaurant is located within the Hyatt hotel, which always makes me feel tourist-y for trying… But it had good reviews and we didn’t make reservations for any other sushi/steakhouses downtown until too late, so we decided to give it a try. Tip: You have to use the Hyatts valet if you need to park, since the restaurant doesn’t have their own designated valet. Ambience: The décor is very modern and they have one of those fancy, crystal fireplaces in the dining room, which gives it a warm atmosphere. Even the bar menu is modernized with the use of an iPad. The kitchen and sushi bar are visible from the dining room and with the great plating and food presentation, it was a treat to watch everything come out. Sushi: Our table started with sushi and I ordered sushi for my entrée. Unfortunately, I’ve had grocery store sushi that was fresher and more inventive than what I was given here. It is grossly overpriced for the quality. The rice tasted stale and their options were spicy tuna, rainbow, etc. Nothing exciting. If you want sushi, I would not recommend coming here Steaks: The steaks were delicious! They were cooked to perfection. I had a few bites of my boyfriends and immediately regretted the sushi choice. There are some great sauces that you can choose from to accompany your steak, including an amazing Bearnaise or a Foie gras cream sauce. Other food: Another person at our table ordered the Seafood Mixed Grill, which she entirely did not care for. It wasn’t seasoned very well and was extremely greasy. Not yummy and buttery, but just greasy. It had a good variety of seafood, but not the best quality. All in all, I would recommend for the steaks and nothing else. It’s pricey and the only food seeming worthy of these prices was the steaks!

I am always looking for new steakhouses in Chicago and I relied on Unilocal to help find one and I took a chance on Stetson’s Modern Steak and Sushi. I made a reservation for 15 people at Stetson’s and upon arriving the hostess was extremely friendly and courteous. We were seated immediately even though our party was coming in 4 cabs. The menu at Stetson’s has a great variety for beef, fish, sushi, and chicken lovers. Also the wine list has great selections and solid variety. Our table selected three wines Duckhorn Decoy Cabernet, Four Graces Pinot Noir, and Orin Swift The Prisoner. Everyone stated all 3 wines were excellent. For dinner I had the Wedge Salad to start with and it was so good, the homemade ranch dressing was incredible. For the main course I had the Cap Steak medium rare with the chimichuri sauce and it was cooked perfectly and seasoned decadently. It actually comes with the sauce on the side and I did taste it without the sauce and it is incredible. Oh So Good! Now the rest of our group had a great experience as well, some had the Chilean Sea Bass, Sushi, Flank Steak, Filet, Scallops. Everyone really enjoyed the whole dinner at Stetson’s. Also the staff separated everyone’s ticket and they were extremely kind and easy to deal with most restaurants would not go the extra mile to do this. Personally I would give this restaurant 10 stars!!! If you haven’t been here definitely go soon!

Staying at the Hyatt Regency Downtown Chicago and needed a place for my team to gather for a meeting. On a busy conference week, make reservations, especially if going with a group. Otherwise you’ll be sitting in the bar area, which wasn’t bad, just all depends on the experience you’re looking for. The service in that bar area was good, so no worries on that score. First, I’ll talk about the sides. They come a la carte, luckily as a group, everyone ordered something that we could share, so we ordered: asparagus, Brussels sprouts, mashed potatoes, spinach, and mushrooms. Based on the amount left(i.e. NONE), the mashed tators, mushrooms, & the Brussel sprouts were the hits. I ordered the Blackened Chilean Sea Bass, it was melt in your mouth good. 2 people ordered sushi rolls and said they were good… Not great, but good. Nothing was left on their plates. One gentleman ordered the Lamb Porterhouse and said it was ok… On a scale of 1 to 5, 5 being outstanding, it was a 2.75. He ranked their sushi as a 4. Another gentleman ordered steak. He gave it a solid 3. Moving on to desserts! DONOT, I repeat, DONOT order the sesame panna cota. It’s beautiful but it tastes… How can I say this delicately??? Like Ass. Ok, not delicate, sorry. They use sesame brittle and sesame oil for this dessert. That’s right… The sesame oil used in Chinese(and other Asian dishes) savory dishes for a dessert. It was funky. 1 bite in, everybody threw their spoons down. They were gracious and replaced the palate-offender and exchanged it for, NOT1, but TWO desserts; the apple pie and chocolate hazelnut mousse. The chocolate was extraordinary rich and made with dark chocolate. If you like that, you’re golden. The apple pie with caramel ice cream was a hit all around.

It was our last night in Chicago with our friend from Germany and we wanted to take her somewhere«fancy.» This place fit the bill without being ostentatious. The hostess was friendly and welcoming. The dining room was cheerful yet elegant. Our waiter, Jose, was a knowledgeable and distinguished gentleman. He made several excellent suggestions that we followed, much to our satisfaction. The food was amazing! We started with the shrimp cocktail. The boyfriend and I split it. The shrimp were large, perfectly cooked, and flavorful. The sauce was a nice balance, not too spicy but definitely not bland. I had the filet mignon with sauteed spinach. The boyfriend had the ribeye steak with the asparagus. Our friend had the cap steak with whipped potatoes. We took Jose’s suggestions for sauces. Every steak was cooked to order. The spinach was wonderfully seasoned. The asparagus had this marvelous horseradish cheese on it. Then for dessert was an apple pie with vanilla ice cream. So good. Cannot rave about this place enough. From beginning to end it was a fantastic experience and when we come back to Chicago, we will be coming back to Stetson’s.

Ok, so it was really hot and we didn’t want to go very far(or at all) from the hotel. So we punted and crossed our fingers. And you know what, it was better that I expected. Service was good though can be a little overbearing. Too much pomp. But they were adept at handling an extra person we brought over with a «we’ll figure it out for you» attitude that I did appreciate. The atmosphere is good too though the music piped in was too loud and a little strange. Go easy on it. As for the food, my dining companion though the steak was excellent. Nothing too over the top but good quality meat served right. Most intriguing was the sushi. It’s overpriced, sure(hence the 4 stars) but two things make this memorable. First, BIG pieces of sashimi with high quality fish. The 9 piece sashimi was a BIG portion and much bigger than I expected. Add a roll on that and it was a very filling meal. The tale of two tunas(or something like that) was an excellent roll. Good preparation and fresh fish. Kudos on the sushi. But again, the cost is very high and it’s not one of those places that I would pick as my «desert island» place in Chicago. That said, for a hotel, it was quite good and wouldn’t hesitate to go back if staying there again. You won’t be disappointed too if someone else is picking up the bill.

A first I was a little nervous because the roll wasn’t that good, but then my kale caesar salad arrived and it had a huge parmesan crisp and it was super good. Then since I was in Chicago I thought I would get a steak — I ordered the 10 oz rib eye and a baked potato. The steak was the best steak I have ever had. It had a wonderful crust on the outside and cooked perfectly. I got the chimichurri sauce and it was really good but it overwhelmed the goodness of the steak so I just used a little throughout my meal. My baked potato was just a plain olé potato. The service was excellent, I liked that they had a guy standing on the side watching for anything you might need, a refill, clearing your table, etc. Overall an A++++ experience.

Went here for dinner and it wasn’t that crowded as I thought it would be. Our waitress was rude and she seemed like she didn’t even want to be there. The only thing I like about this place was how tender and juicy my steak was. The veggies were bland, the soup was way too salty and it was boiling hot in the dining area. The over priced food doesn’t help either.

Very nice restaurant with sophisticated ambiance. Good service. The food was good but not spectacular. The sushi was above average in taste and average in creativity and presentation — it does compare to a high quality sushi restaurant. We tried the Cap steak which I had seen several reviews rave about — personally I thought the steak was a too fatty. It wasn’t tough chewy fat, but rather soft buttery fat — tasty but not texturally appealing. All in all a good experience.

After sampling a lot of what downtown Chicago has to offer this week, I decided to give the restaurant at my hotel a try — so I walked into Stetsons at the Hyatt Regency with few expectations and a hankering for seafood. I immediately liked the vibe — cheerful fire blazing, friendly staff, satisfied diners who looked like their needs were being well taken care of. Sitting at a table near the fire in the smaller dining area adjacent to the bar, I perused the menu and selected the barbecue eel sushi, then asked the happy-looking waiter what else he had in the seafood department. «Chilean seabass» he replied without hesitation. I selected the 5 oz sea-bass over the larger portion sizes, and it arrived very soon along with a slightly spicy but completely superfluous chimichurri sauce on the side. The sea-bass was delightful — perfectly flaky and moist with just the right amount of sear to it. I finished most of it before my sushi arrived! I was less impressed with the barbecue eel. Maybe there was nowhere to go but down after the sea-bass, maybe my unagi standards are astronomical as I live for eel, but it just didn’t deliver for me in the freshness department. It was just ok. Service was excellent — especially the Chilean sea-bass recommendation which was spot on, so four stars in spite of the«meh» on the eel. I will be back for that sea-bass and get a bigger portion next time!

Surprise, it was actually very good. I have been to virtually all of the top steak houses in Chicago(a tough job but somebody has to do it) and was planning on going to Chicago Firehouse this weekend until a fire changed my plans. Stetsons was not even on my radar but the Unilocal reviews were solid so decided I would try it. I was not very hopeful, though, as it is hard to compete in the rarefied air of Chicago steakhouses and being in the Hyatt was strike two. As I mentioned, pleasantly surprised. Not the top Chicago steakhouse(that tier to me is RPM Steak, Benny’s, Joe’s and David Burke’s) but comfortably in the next tier(Mastro’s, Bavettes, Capital Grille). One big selling point is that they have a sushi bar, so we started with two sushi rolls. Both had very fresh fish and ample size. Spicy tuna was very good. Fiery hamachi roll was high quality ingredients but not fiery. Also had an order of crab legs, also very good. Not as good as Joe’s, but more than enough for two people, easy to take out the meet and it was nice and tasty, not needing any butter. For an entrée, I had the cap steak, which was great. The cap is the top part of the rib eye, which has a ton of flavor. You normally see it on the menu at Vegas’ steakhouses but it is relatively rare(sorry for the pun) in Chicago and quality is very inconsistent. The cap was perfect here, cooked exactly as ordered, excellent flavor and marbling. Nice presentation also. We had whipped potatoes, which were not bad but nothing special. The wine list is presented on an iPad, which is consistent with the overall modern vibe of the place(not the old school steakhouse nor a typical hotel restaurant). Not only was the wine selection good and prices reasonable, there was more info on all the bottles than you would get in a written menu. Last thing, free valet parking, a nice surprise in Chicago. Overall, a very pleasant surprise that is worth going to again.

Located in the Hyatt hotel this is a gem! 5 star service &5 star food! For starters they bring warm popovers to your table. Cocktails are exquisite. Appetizers are generous. Hubby had the lamb chops & he was in heaven. He’s a butcher & knows quality. I had sushi. It was perfect & not to salty as sushi can be. Dessert was A winning Nutella cake. The worst part was leaving this restaurant. The ambience was so warm & cozy. Can’t wait to go back when in town!

I just embarrassed myself at this place. It was amazing… I’m in love with cap steak and the chimichurri sauce on the side was a wonderful complement, although definitely not needed. I also had the chopped salad with basil ranch and highly recommend. I don’t even eat salads normally but the medley of ingredients are really nice, especially with the onion rings. We finished up with a blueberry compote that was out of this world. Wonderful all around! Beautiful restaurant, great service, excellent food. A little pricey but worth it.($ 42⁄12 oz steak) I’m just so impressed with this place; a very nice surprise and I’m glad it was conveniently located in our hotel so that we could experience it.

Nestled in the Hyatt, this place is a must try as their steaks and sushi are some of the best food I had in Chicago. Since we were dining as a family and everything is a la carte, we decided to order«family style» and shared the various items we ordered. Sushi — Definitely good quality as we enjoyed the Rainbow and Spicy Tuna rolls. We almost were tempted into ordering a 3rd roll as we waited for our steaks to arrive. On the rainbow, the salmon and tuna tasted fresh and extremely enjoyable. Spicy Tuna roll also was very good but wasn’t as spicy as I’m use to in previous Spicy Tuna experiences. Steaks — Thanks Unilocal for this one! The Ribeye was definitely the highlight of our meal. Cooked between medium rare and medium — the steak was tender, flavorful, and had a variety of temps to satisfy our group. The Porterhouse, while good, wasn’t as pleasing as the Ribeye. The Porterhouse was cooked more on the rare side but the plate also already had lots of juice so some of the flavor was missing. Sides — asparagus with cheese — pass. Too much cheese and it had melted together that it was easy to just separate the asparagus from the cheese. Roasted mushrooms — good complement to the steak as well. If the mushroom side had just a little more sauce, it would’ve been awesome to spread atop the steak. Whipped potatoes — good complement to the steak. Almost like having a baked potato.

I do believe I felt like a sushi queen when eating at this restaurant. To truly make me happy, I don’t need the frills of a waiter pulling the seat out for me or handing me a warm washcloth for my hands before my fancy meal. But, if it’s going to be offered — I’ll take it. And with that, I give you Stetsons. Stetsons is part of the Hyatt Regency Chicago. Classy and filled with amazing sushi. My first«awe, yes» moment was when they passed out the warm, melt in your mouth bread. Woweewowwowwow. And from that point, I was pleased. The wine list? Pricey. The sushi rolls? Pricey. Everything was pricey. I don’t usually splurge, but sometimes when you’re a bit stressed and you need to unwind it doesn’t hurt to spoil yourself. So, spoil yourself at Stetsons. I love sushi and this place really was top notch.

I don’t know how I’ve been in Chicago for almost 9 years and I haven’t tried this steakhouse! WAH. It’s amazing! I really admit this might be the best steak in the city! My boyfriend and I had such a great time and enjoyed the food so much we want to come back again soon! Appetizer Grilled Octopus with apples.- what a great dish. I haven’t had grilled octopus before but the flavor was very good. The texture takes some getting used to but overall very delicious. I’m glad I ventured out and tried something new. Main Dish Filet — This filet was done a perfect medium with a salt and pepper crust done to perfection! Inside was juicy and retained a lot of the good flavors. I paired this with Chimichurri sauce which added the perfect bite. Ribeye — boyfriend ordered this and also said it was the best steak he has ever had, wonderful marbling added to the flavor and the crust and doneness was perfect. They really know how to cook a good steak. He opted for the Applewood smoked bacon burbon sauce which was so soooooo delicious as well. Side Roasted Brussels Sprouts, Butternut Squash, Crispy Bacon — yum order this Dessert Opera Case — I would pass on this the texture was not what I expected a little tougher so I didn’t enjoy this much. Overall can’y complain I was very full the service was top notch attentive and I really enjoyed the high quality and flavors of the food!
