Ordered a pepperoni pizza and their spicy sausage(had a different name). Had to ask them to redo the second Bc it was too burnt — and they did very kindly. Both were fantastic. Dipped the crusts in olive oil. couldn’t be more happy with the food and service. Ended with pistachio gelato and everyone else had salted caramel.

The portions were very small on the standard fare, you must pay more for ‘extras’ that are often considered standard at other Pizza places. The food was fresh, however and tasted good, what there was of it. Go hog wild and build a big fat pizza, perhaps then you’ll have a satisfying dining experience. I’d go back, but only if I was able to go outside my budget and splurge.

I have been to Italy and had pizza there, and let me tell you… Pizza in America is not what pizza was meant to be. The delicate blend of flavors and sauce on a thin brick oven baked crust is an art from, and when you go to Pizzaiolo, you know you’ve walked into the den of a true artisan. From the soft glow of pendant lights, to the artwork on the wall, the atmosphere fosters a healthy appetite and conversations full of laughter. Most of the time, it’s even better than the pizza I remember in Italy. This business has quickly become a staple in my life, and I can only assume many others lucky enough to be within 50 miles.

What a hidden gem in the small town of Colfax Ca. I had a #4 Salsicca Signature Pie! Delicious is an understatement. The owner was working and was very helpful in helping us choose one of the Signature Pies. Her and the girls behind the counter were super friendly and I will definitely make sure I am hungry when I drive Highway 80 to Reno. Do yourself a favor and enjoy a delicious pie from Pizzaiolo. Very authentic pizzas. Not what you’re used to from a standard«American» Pizza joint. To start, the thin dough is very tasty – and due to the wood-fired oven, is crispy as well. Toppings are«sparse” – as expected – but very rich and flavorful. I prefer the«red» sauce, my wife prefers the«white». The great news is that the pizza is inexpensive enough that we can both be pleased with what we got. As a bonus, you can often get sourdough bread here as well – fired in the wood oven. Yum! Our family comes up here for pizza from Newcastle regularly.

My five year old son declared that this was the best pizza of his life. The kids ate the entire crust. The ice cream is excellent too. Its seconds off the highway and worth breaking off a Tahoe drive to take in lunch /dinner here.

My second review after last year. Came back from a day of skiing and always like to stop by. The reason I enjoy this place is the wood fired oven which gives a nice taste to the pizza, in addition to the thin crust which it is what I do not find in other chain pizza stores.

On our way to Thanksgiving with the family and we knew we’d have to stop somewhere before we hit the snow. Found this place and decided to give it a go and we were not disappointed. Coming from San Francisco with all the hoity – toity pizzaeria and restaurants, this one would have no problems standing among them. I wasn’t feeling like pizza since I don’t eat it often but I’ll be damned if we don’t stop by again on the way back down. The dough was perfect and the ingredients were fresh. Having recently been to Italy I can honestly say I did not expect to have a comparable experience, let alone in the mountains, but this one is on point. Great find!

I needed a quick bite on my I-80 drive tonight and did a quick Unilocal search which directed me here. I was very pleased at being able to get an excellent pizza(I tried the pancetta) for only $ 8 that was ready in just five minutes. Another reviewer said the pizzas are small and the crust is thin. I disagree. The pizzas are much larger than what I normally expect for a personal size. I was pretty full after two of my six slices but I ate a third slice anyway. I think one of these could easily feed two average sized women with normal appetites. Also, while my crust was fairly thin overall, it was not the cracker-like style(thank goodness). It had a chewy outer edge, which is how I like my pizza crust. Now that I know about this place, I’m sure I will return with my husband on one of our future drives through Colfax.

If you’re expecting«standard» Americanized pizza, you maybe disappointed. Or, you may completely be changed for life and never be able to eat pizza the same. I first loved these pizzas for the thin, chewy, CHARRED(not BURNED)*which btw I love the people that complain about the charring as a negative. It’s meant to be that way. They did it on purpose. And it’s fantastic. Ok– so for $ 10 I can pick a gourmet traditional pizza(think pistachios, arugula, butternut squash, homemade sausage… These are the topping options??? So rad to explore outside of pepperoni and pineapple!) as well as a tasty beverage. $ 10?! A pizza like this elsewhere would easily by itself be in the $ 15 – 20 range. Consistent, friendly and efficient staff. Their style of pizza is light and refreshing, think of the difference between west coast, Chicago or New York style pizzas. You’ll appreciate the original style. Totally worth trying.

Best Italian pizza I’ve had since traveling in Europe. For $ 7.95 order a huge pizza Margherita that I could only eat half of. Fresh sauce, lots of cheese, few leaves of basil that makes this a popular pizza. The crust was chewy and crispy and complimented the entire pie. Will make the trek to Colfax when I’m craving the kind!

Hands down this is the best pizza shop in the Auburn-Weimar-Colfax area. The staff are friendly as well. You will notice that they keep the restaurant clean.
