Their original cooking methods creates splendidly rich and affluent taste, which makes the soup just more than a „standard tonkotsu ramen“. On top of that, their homemade noodles distinguish the Ramen Tatsuno-ya from other Japanese style ramen.» REVIEW This Tonkotsu Ramen is spectacular on every level, the broth cooks for twenty hours and has the most complex yet delicate flavor profile of any tonkotsu broth I have ever tasted, just amazing. The hand made noodles use a fine Japanese flower that gives them a rich color, taste and great mouth feel, they are straight not curly and posses a firmness that keeps them on your chopsticks and at the same time from becoming a bunch of goo at the bottom of the bowl. Now about the pork, HFS it was the one of the best tasting things I have ever put in my mouth the only drawback is only two slices but this made the whole experience more of a joy as my son and I savored each and every mouthful. The taste of the pork stopped us dead in our tracks and we had a spiritual experience that required a moment of silence. As we where eating this amazing Tonkotsu Ramen we took time to pause and exchange opinions and it was unanimous, absolutely perfect. We finished every last drop, something we normally don’t do as we tend to leave some broth behind. One of the chefs took the time to pose for a photo , that’s him on the banner he is standing in front of, guy was cool as hell.
