Great little food cart; very friendly owner. Had the sopes with carnitas per her recommendation — was excellent. Very fresh, with lots of flavor. Will definitely be back!

This is a restaurant on wheels in the parking lot of Baxter Auto Parts in Glenwood. As I was driving through Glenwood today I saw a sign that said«fresh tortillas.» I then noticed the restaurant on wheels(as the owner likes to call it). I took a look at the menu and it looked like pretty typical Mexican fare. There were tacos and burritos and the usual stuff, and then I noticed sopitos. I asked about them, and he said they were freshly made, which meant 2 thick, fresh corn tortillas piled with ingredients. I got the chicken and they were $ 7.50 which seemed a little high for a mobile restaurant, but I liked the idea of hand made tortillas, so I went for it. The sopitos were not available al la carte, so I had to get the customary Mexican rice and beans with it. The sopitos were great!: better than other Mexican food I have had in town. The chicken was pure white meat and he explained that it was organic and that he purchased it at Market of Choice. He didn’t even advertise the fact, but I could taste the freshness. The sopitos also had fresh avocado, lettuce and tomatoes on them. Once I saw how quality the ingredients were, the prices seemed like a bargain. Two nicely dressed guys came by asking about dollar tacos, and when they found out the tacos were $ 2 they promptly left. We got a laugh out of that. They owner is making great fresh food for a reasonable price and they would have rather had some grisly mystery meat in a little factory-made tortilla for $ 1. So, when driving to Springfield don’t pass up the chance to try this great little taqueria on wheels(it’s actually a pretty big motor home). One recommendation: have the all the menu items available al la carte, and have a hotter hot sauce available. The hot sauce I had with my sopitos tasted great, but I like some kick in it, and this hot sauce was pretty mild. I look forward to going back soon to try different menu items. I know the ingredients are quality and fresh, so I am betting the rest of the menu items are as good as the sopitos I had.
