We recently booked The Taco Stop for our son’s first birthday celebration.(I know, awesome, right?!) In advance, my wife sampled the food with her parents at New Belgium one afternoon. My father in law didn’t speak for 10 minutes because he was too busy with his nachos. Needless to say, we were ready to book with them. Everyone we worked with to book the event was wonderful, flexible, and the communication was great. We had a guest list of about 60 people and a window of two hours. Cesar and the gang made quick work of orders and everyone was served quickly. The feedback we got from our guests was very positive. We had many smiling faces, lots of mmmmm’s, and full bellies. They were a hit, especially the steak quesadillas. In addition to this, the boys had Disney tunes playing on their speakers and drew an awesome«Feliz Cumpleanos!» sign on their board for my son. I can’t say enough about how great they were. The vibe they provided was awesome and they definitely made our event. When I finally got to eat towards they end I was able to sample everything on the menu and I was not disappointed. Everything was spot on right down to the chile and salsas. We were very pleased. Thanks again, for making our celebration one to remember!

One of the only REALLY authentic Taco spots I have found in FoCo(one other one is a food truck also but isn’t as good). I grew up in Southern California and went to College in San Francisco, with the best tacos outside of Mexico all around me so I know my tacos. These are the best I’ve had in Fort Collins, so far, in the two years I’ve lived here. The meat is cooked well and isn’t the fatty cartilage that you far too often find mixed in with the carne asada. The only challenge about this place is the lack of a brick and mortar location so you have to look up where they will be, or just happen to run into them when set up on a corner somewhere. If you are so lucky to run into them, grab some tacos, you won’t regret it.

What a fantastic food truck. If you want authentic Mexican street food, this is the stop for you. They offer tacos, quesadillas and some amazing steak nachos, and you can get a filling and tasty meal for under $ 10! Their cheese sauce for the nachos and their salsa is very good and I have them add both on the tacos too. They should package this stuff and sell it. I found them while they were in front of New Belgium Brewing(Thursdays) and the customer service couldn’t be better. Otherwise, I was told they’re in old town for the rest of the week on college. This is a definitely a food truck worth trying.

These guys know their stuff. They are from Mexico and we KNOW they make all of their salsas and chop their own ingredients. No bagged food. I want their salsa by the gallon, it is so bueno. Arriba Caezar!!!

It’s hard to argue 5 stars here. I love my Mexican street tacos and when you find someone who could make them perfectly then you keep seeking them out. This will be me when I go up to this area. I thought these were among the best tacos that I have had in Colorado and I love that when they say spicy, they mean spicy(and that’s not gringo spicy!). Very very good option especially if you’re having a beer at one of the local breweries!
