Bubba Luigi’s Road Trip

I had a really good Smoked Pork Parmesan Pannini (with 3 n’s) from Bubba Luigi’s Road Trip.
A Panini can be really tricky to pull off well. If the bread is not just right it can be too hard when grilled, and it tears up the roof of your mouth. I hate that. This one was perfect. The bread was soft yet grilled, flavorful, not too thick, and complemented the smoked Pork. The pork was a wee bit dry, but the sandwich was not. The Parmesan was fresh and good, but did not complement the smoked pork as well as I would like. Still, I love the effort. Overall, I thought the sandwich was excellent! I was very impressed!
I was also impressed with the slaw. It was fresh, crisp, very little if any mayo, great flavor and, it complemented the sandwich perfectly!
I regret not engaging with Luigi and his family about food. They were very nice, and wanted to talk, but the location was Swamp Head Brewery, and my husband is very uncomfortable at Swamp Head. He is like a cat at the beach, staying very low to the ground, watching everyone wide-​eyed, and ready to run at the first sign of trouble. He was not his normal engaging self, and we missed out on talking food with a family that clearly loves food, thinking and creating, and trying to grow and figure out the complex world of making people happy with food. I wish we could have stopped and talked.
Luigi loves food and it shows in his creativity and effort. I will find him again in another location so that we can talk food. I want to try a bigger assortment of what he is cooking up. I am excited for Luigi and his business. And, I think everyone who loves food and food trucks should give Luigi a try and then write about it on Unilocal

Luigi is not dissimilar to a carnival barker. He’s outside the truck handing out samples, chatting up all the customers and cooking inside. He loves food, his large family and life. Quite the hoot he is.
They offer a fair assortment of Italian meals and I gorged myself on fried kale florentine ravioli. It seemed more of a small plate but it was good. Better yet was Luigi’s homemade marinara sauce. It’s no too sweet and not an uptown sauce but none the less very good!
