So I call my friend and say«I’m at Humble Pie having an incredible pizza»! To which he replies«Cool, man. I didn’t know they had gotten back together». lol If only. This particular Humble Pie cooks up one of the best pies in Gainesville. Why? –Organic? Check. –Fresh local ingredients? Check. –Gluten free? Check. –Small local business? Check. Add to those reasons that they cook with a mobile home made wood fired clay oven. I’m not unfamiliar with Humble Pie as I’ve seen them for the last couple of years at various events in 2 cities. I’ve just never gotten around to purchasing a pie. Evidently it’s my loss as I would of been singing their praises all this time. I chose to go with the Sweet/Savory pie and I couldn’t be more satisfied. It’s comprised of: granny smith apples, candied walnuts, local honey blue cheese and mozzarella. It was 14″ of perfection! All of the ingredients worked for each other instead of working against or even standing out. The sweetness of the honey playing with the pungent blue cheese. The crunch of the candied walnuts and the texture of the apples. Sooo delish. The foundation of the mozzarella was the right choice. Whoever thought this pie out did a great job as it never would of worked with a base of tomato sauce. Prices range from $ 8-$ 13 and they do a lot of private events. You must see them cook at night as the vision of that flame of the clay oven with the nights’ darkness makes for a great sight.

I think we got the wrong thing. Will try again, but we didn’t love the pizza we had. The ingredients appear to be top quality though.

They brought their oven to a party i attended last weekend. Excellent thin crust pizza of different types. Similar to pizza we had in Italy. They turned out pizzas quickly but well cooked. Fresh ingredients and nice crispy crust. A great idea and fun to watch.

These guys need not be humble but ought to be bragging’ about their wood fired pizza because it is the best pizza in Gainesville. If you’re lucky enough to catch them Wed. afternoon at Downtown Bo Diddley Plaza or Saturday am at the Haile Farmer’s Market you are in for a real freshly made, vegan treat with lots of good local produce! I can’t say enough about this mobile food experience, you just have to check it out yourself.

I’ve seen Humble Pie at the farmers market every Wednesday but it wasn’t until yesterday I made the decisions to finally get something from them. Boy, am I glad I did! I got a pizza with bell peppers, an egg, roasted potatoes and more! It was so delicious. The price seems a little steep for a farmers market but honestly, it is getting a deal for this pizza. If you were to go to a sit down Italian restaurant you would pay double this and it still wouldn’t be as good! Love it, will return :)

This is important. This is what food should be. You may not know one of the best kept secrets but there is a guy selling handmade pizzas from a homemade clay style oven that is technically a food cart. I need to take pictures for you to believe it. He serves every Wednesday at the downtown farmers markets, usually on Fridays at Cymplify, and at food truck rallies. Everything is handmade and is fired up right in front of you. Most everything is vegetarian and he carries Daiya cheese for vegans and gluten free crusts. He has a rotating cast of pizzas including a pesto pizza with blue cheese and walnuts(!!!). A sweet potato/black bean pizza. An Irish pizza(with potatoes). A bbq tempeh pizza. And an alfredo pizza. Etc… Everything is vegan except the cheese so any pizza can be made vegan. But I cannot stress how good his pizzas are. Orgasmic. Last night I had a pesto pizza with daiya and added kalamata olives and tomatoes. The crust melts in your mouth. Can crusts even do that? Have I ever eaten pizza before this? The answer is no. The saltiness of the olives, the acidity from the tomato, the crunch from the walnuts. I was speechless except for the uncontrollable moaning. The pesto was juicy and had this satisfying funk to it. Turns out he uses walnuts instead of pinenuts for the pesto. I haven’t stopped talking about it since… I’m hoping me posting this will get me to talk about something else. Probably not.
