I have been here twice now for lunch and really like this place. I haven’t seen another sushi place where you can build your own roll, and I like the flexibility of that concept. I am not that creative myself, so I opt to order one of the«Featured Rolls». I have had the Beefinator and Slammin’ Salmon and enjoyed both. The highlight of HDYR is the service. The staff is very friendly. I had a slightly long wait the first time I came, and I was given a voucher for a free roll to make up for it! When I came back to use my voucher, I checked in on Unilocal and got a free cup of miso soup. I plan to make HDYR one of my regular lunch spots. Definitely try it out if you’re looking for lunch in the tunnels!

This place was great! Took my son because he loves sushi and has been to several sushi places. We loved the concept of «create your own sushi.» Start with seaweed or soy with white or brown rice. Choose three«vegetables» one option being cream cheese and others being fruit. And then of course choose your«protein». There are several sauce choices and a couple of sides. There is even a kids menu. This is a must visit during lunch if you are downtown and love sushi.

This review is for the udon only.(beef). I didn’t want to write a review based solely on the udon here, but it’d be an injustice if I didn’t. I ordered the beef udon after the lunch crowd died down and it took forever to come out. Maybe it’s because the workers seemed to be moving at snail pace and maybe becuase it was also sitting on the counter right in front of me for several minutes as 5 orders after me got their food. I hate it when to go orders are ready, and nobody gives it to you. I can see it… right… there! Flavor wise, it’s terrible. Easily the worst udon I’ve ever eaten. It’s also a contender for worst soup in general that I have ever eaten. It’s literally that bad. I’ve never tasted udon broth like this. It was so salty and just weird tasting. I can’t begin to describe it. I paid $ 2.50 extra to add«beef» to it. Mistake! I got the equivalent of a little over a shot glass worth of chopped beef that tasted super salty with a little bit of pepper. Don’t get me started on the noodles… just don’t. Overall it was bad bad bad. I’m kinda peeved I paid $ 9.20(after tax) for this«meal». 2 stars becuase I felt bad this review was for the udon only. Otherwise it would have been 1. I’m so thirsty now. I have to go get some water. No joke.

I love coming here when I have a quick lunch break and a sushi-fix. The staff is super friendly! The menu can get slightly overwhelming, especially if you decide to make-your-own, so it’s nice to have a helpful staff. The food tastes great. I usually make my own roll, which is awesome and easy — just tell them what you want and voila! They also have already existing rolls to choose from. Miso soup is a free check-in offer too — except pull it up on your phone early because I usually never have service in the tunnels to search for it and use it! Reasonable prices.

They have changed some things since they opened awhile back. Now you order your roll at the cashier and they take your name and call you when you roll is done. You still can watch them make it, but it is not like the«Subway» sandwich version where you talk them through what you want and then pay. Overall, still good. They got some new items such as the bowls. You can get ramen, salad, udon, or rice bowl. You can make your own salad or rice bowl, the ramen and udon you can add protein to. I like the Slammin’ Salmon bowl that I pair with a side of endamame and seaweed salad for a great healthy and protein packed lunch. Expensive? Yes, around 12 bucks, but you get a packed bowl and just add your side items and you will be full. But I save How Do You Roll as a treat so I do not mind forking over double digits for lunch in the Tunnels. Employees are nice. Keep an eye out for Groupon specials! Then you can get 12 bucks worth of food for $ 6! Good sushi for the Tunnels of Downtown, rain or shine. :)

I got a groupon for my lunch purchase. I really wanted to try this place ever since I saw it on SharkTank. It was … weird. So it’s not like Chipotle(at least this one wasn’t anymore) where you watch them make your roll. It’s just like any take out. The ramen was pretty bland. For 600+ calories(shown on menu) I want flavor! My personal made roll was very«soft». Even tho I had cucumbers and jalapenos inside, I felt like I was eating mush. Nice and friendly staff. I’d definitely buy a groupon before trying again. Free tax etc when you do!

I went back recently, and it’s as good as always! I love that I can grab sushi, with brown rice, that is fresh made in front of me! And, I can calculate the roll nutrition on their site, which is really great as well! On a side note, I caught a glimpse of the owner on Shark Tank in the preview for next week’s episode. I hope he gets a deal — — I totally believe in the concept!

What I like about this place: — You can choose exactly how the maki is made. Brown or White Rice; Seaweed or Soy paper; Inside out; etc. — It tastes good, which I wouldn’t have expected from the pre-prepared nature of the fish. — The prices are quite reasonable. — The miso is good. One«meh» item: — On this particular day, the staff didn’t seem like they knew what they were doing. There was a bit of fumbling and a bit of uneasiness in the act of assembling my food. As a result, it took a while to get my food. Maybe they just need practice. Overall, I was impressed. It is the most convenient place for me to get sushi downtown, and it was surprisingly good!

The first visit here I was pleasantly surprised how good it was for«cheap» sushi. I got the custom roll with seaweed, white rice, avacados, cucumber, jalapeño and tuna. Tuna seemed fresh, had a good time eating it, etc. On the second visit I was dissatisfied and it left a bad taste in my mouth… literally. I ordered white rice, the guy behind the counter broke the rice sheet so he started over… except this time they were out of white rice… so I got brown rice. HUGE mistake. Everything was down hill from there: the rice was waaay over cooked giving it a horrible texture, the veggies were lacking in quantity and the tuna had an odd/off flavor. I ate a few pieces because it was lunch and I was hungry, but then I seriously thought about the consequences if I ate the rest and got sick… I may be back but it will be awhile and could possibly take some convincing by my fellow co-workers!

Yum! Yes, this is the chipotle of sushi! Easy access by the tunnels and you can use a frequent visitor card, as well. Lots of interesting specialty rolls, and pretty quick meal.

The Chipotle concept but for a sushi roll. Heavenly. For about $ 7 I make my own sushi roll: seaweed wrap, brown rice, spicy salmon, cucumber, avocado, jalepeno, and sprinkle with the only 2 free toppings — pepper powder and sesame seeds. Be sure to get a How Do You Roll card, called the«High Roller». Upon registration of the card online, you get a free miso soup or edamame. After 10 rolls, you get a free roll. This place is in that nook in that hallway close to Beck’s Prime. If you’re coming from the South side of the loop, walk Beck’s Prime towards the Park Shops. You’ll find it on your left.

Bah, c’mon guys! So, my second trip, and I had my coupon for a free roll. I got here right after they«opened» and yet again had to wait as rice was cooking. I ordered two spicy tunas and waited. As I mentioned in my previous report, these aren’t chefs and apparently they aren’t trusted with knives up front. To cut your roll, they put it into a machine that has spinning blades. Apparently they forgot to sharpen the blades and it exploded my rolls instead of cutting. So, more waiting. The roll itself was OK, and the price is right but man, this place needs to get it’s processes together. I prolly won’t go back.

If you’re reading this: STAYAWAYFROMHERE. Please. So I don’t have to wait long in line or for the ginger container to get refilled. This is definitely my go to spot for a sushi lunch(sorry, Kokoro, I’ll miss you). Azuma and Kokoro are just a little too far so most of my sushi cravings had to wait until dinner. No more! HDYR is near the office, unbel-azingly affordable, filling and mm-MMM! There’s no point in repeating what David said. He kind of put the rest of us to shame with his informative review.

I’m a regular here, although I always forget to check-in while I’m in the tunnels. I love this place because I like having control of what goes in my food. I really like the fact that I can see my food being made. My standard order is seaweed wrap with brown rice, jalapenos, cucumber, tamago, salmon, chili powder, and sriracha. You can have a fairly healthy lunch from here if you don’t load up on the creamy and the crunch additions. Rolls are priced on your choice of protein plus additions. The menu also offers some suggested rolls if you can’t come up with your own combination. I haven’t tried these, but they do look loaded with the unhealthy stuff. They have a frequent diner club, and you get a free miso soup or edamame for registering your phone online. Since I’ve been there at least a handful of times, the workers have started to recognize me. They are always pleasant, and I’m always sent off with my order and a cheerful, «Thanks for Rolling with Us!» Cute.

Pretty freaking COOL!!! And neat location to visit, the tunnels in downtown Houston is a neat place to explore. But I am weird, so it may not be for everyone. This place is like a Sushi version of Which Which or Chipotle where you kind of go down a line and pick the things you want in your roll. There are little direction cards to help you and tells you your limits of each item etc. So it’s easy to follow. Each roll makes 10 slices, so it’s a good serving. My bf and I each got 2 different custom made rolls. Both of our choices that we put together were great and tasted good and I was full at the end. The only thing I would be concerned of is during lunch time at busy hours, it will take a while to prepare your roll. As we both came for a late lunch around 1:45pm and it takes some time to go down and have it made as you choose what you want. Most of the food places down here close at 2:30pm as they do not get many customers afterwards since it’s primarily business workers on break or tourists. Really awesome concept and tasting food! Oh yes, we also got mochi ice cream of green tea and mango flavors. YUMMMMM!!! :D

A cool concept… you build your own roll, and they make it on the spot. Pick a wrap/skin– soy or seaweed Pick rice– white or brown Pick 3 veggies– asparagus, cream cheese, jalapeño, cucumber, mango, strawberry, tofu skin, etc. Pick meat– salmon, tuna, spicy salmon, spicy tuna, chicken, beef Add sauce– all sorts of combos They charge for the base(skin, rice, 3 veggies), and you pay extra depending on the meat you choose. A salmon roll, which is pretty filling, comes out to be around $ 7. It’s clean, efficient, and fresh. A lot of people are really taking on to this place, so it gets pretty busy at lunch time. If you like this place, as many of my co-workers do, be sure to sign up for the rewards club. You get something like one free roll after buying 10.

A welcome addition to downtown lunch — it’s about time there was some good sushi in the tunnels! Situated near Bombay Pizza and Bewitched in the tunnels, How Do You Roll has been stealing away clients from neighboring restaurants, a good sign their food is fresh, different and delicious. Apparently everyone gets the concept — maki rolls à la carte — choose your veggies, protein, rice, condiments and sauces and they’ll wrap it up for you in 2 minutes. Seaweed salad and edamame at $ 1 is a steal. Everything is fresh, fresh, fresh. Rolls can go for about $ 5 on the low end to maybe $ 13 if you get crazy with toppings. I’m averaging about $ 7 a roll, very comparable to other lunch prices downtown. I like that there’s nothing fussy about the food yet it’s contagiously delicious(my fellow co-workers and I are already repeat customers). Having it our way and being able to redesign our rolls on every visit is part of the fun. But if the raw fish, veggies, rice and seaweed weren’t of such high quality, I think it would have gotten old by now. Frankly, I think it’s getting better. If you want fancy sushi downtown, good luck — you’ll need an hour and a half and have to drive at least to Midtown for something worthwhile. But for quality maki in the middle of a hectic day, HDYR is a treat. HYDR maki reminds me of grab and go onigiri(sushi rice balls) or tako yaki(octopus) when I was in Japan. I’m surprised someone hadn’t thought of this sooner. On a customer service note, everyone is very friendly and fast, the counters are clean, and they aim to please. Even with some massively long lines last week, the service was steady and with a smile.
