I’ve stopped in to Carol’s a half dozen times or more with family and friends since it opened, and it’s become a bit of a habit thanks to the quality of the food and the atmosphere of the place. The previous restaurant at this location had been sorely in need of an overhaul, and the physical improvements to the interior have transformed the dark and somewhat dingy eatery that used to occupy this space with a light, airy and much cleaner environment. Along with that, the food quality has gone way, way up. The standard menu offers pretty typical diner options like hash and eggs or sausage gravy and biscuits for breakfast and satisfying comfort food at dinner time(somehow I haven’t made it in at lunchtime yet), all prepared skillfully and with generous portion sizes(man, you get a lot of bacon compared to other places). One of the things that makes Carol’s stand out among the competition(and there is some — there are at least half a dozen quality diners within a few miles’ drive) is an inventive daily specials list. Check the board when you come in and see what the chef has cooked up today. On my most recent visit, breakfast specials included pineapple upside down pancakes, and a belly-buster sandwich offering eggs, bacon, ham, cheese and more on french toast with maple syrup. Even as I type this review I regret not trying the pancakes, both because I love pineapple and because the overall quality of the food(I have enjoyed everything I’ve tried here so far) allows me to trust that even something off the beaten path like the idea of pineapple upside down pancakes is going to be tasty and delightful. Our server informed us that the chef watches Food TV to get new ideas, and that’s a sign of someone who loves cooking. Carol’s Airport Café 2(kids will enjoy the aviation theme with lots of artwork, models and other aircraft-related items tastefully decorating the place, and yes, it did previously serve as the eatery at the Warren County Airport before it moved to its current location) is well worth checking out whether you’re in Hudson Falls or anywhere within driving distance. It offers very good food in a pleasant, slightly offbeat atmosphere with genuine hometown charm.

A down home family atmosphere, with some improvements and updates being done with the new building owner. Food is diner fare, with some surprises with the specials. Staff has always been friendly and helpful. I love the breakfast sandwich’s and never ending cup of coffee.

I stopped by Carol’s Airport Café 2(formerly Fish Fry Café) in Hudson Falls, which is open 7 days a week for breakfast and lunch plus dinner(Thurs-Sat). Like before, the atmosphere inside this cozy and casual restaurant is pretty old school inside with table seating and dim lighting. The breakfast offerings include eggs, 3 egg omelets, pancakes, French toast, breakfast sandwiches, sausage gravy over biscuits, hash, and sides. The lunch menu consists of cold & hot sandwiches(with chips/fries extra), clubs(with fries), salads, burgers, hot dogs, fried foods, comfort dishes(specials), and dessert(pie, ice cream). The prices here are pretty reasonable, most items under $ 8. For lunch takeout, I ordered a Tuna Salad Sandwich($ 3.95 plus tax) on wheat bread with chips and dill pickle spear, which boxed and set to go in about 5 minutes. The sandwich was good and very basic, consisting of soft tuna salad(not too much mayo) between two slices of soft wheat bread. The potato chips(rippled) were generic, lightly salted. I would stop here again, probably for breakfast.
