Pizza is greatly overrated with stiff dough you barely can cut with a knife if you ask for one. Furthermore, it is mostly burned and over cooked. If the guy in the kitchen is the owner, he needs some training how to mix and cook pizza dough. The pies seem a lot better. Service is arrogant in some ways as I have been told they follow the boss rules. They are very cheap on silverware and the knifes are so worn out we should be better with plastic. I am a new resident of PT. My experience is a disappointment.

Let’s start with the things they got right: Location, concept, and a welcoming interior. That’s about it. The perfect trap. Now for the rest of the experience, which is mostly bad things: The wait time was absolutely unheard of. We waited 45 minutes for improperly cooked brick oven pizza. If you know anything about cooking pizza, then you probably know it only takes about 3 – 4 minutes in the oven at high temp, and 7 – 8 at lower temp. There is simply no reason a pizza should take 45 minutes to get to me once I’ve ordered. About ¼ of the top of my friend’s pizza was burned to a crisp, and the bottom, like mine, was undercooked, though my top fared much better than his. Looking at my friend’s pizza, I was honestly embarrassed for the restaurant. It shouldn’t have been served. Overall taste was bland. Decent cheese and sauce, but the dough left something to be desired. It looked like someone rolled or pressed the dough too hard in the center. We also ordered pies at the same time as our pizza, expecting them to come out relatively soon after the main course(the waitstaff even mentioned this), but after waiting another 20 minutes once our pizza was gone, watching employees meander around, wiping down various surfaces in the kitchen, I had enough waiting and went up to ask for the pies to go. The employee working the counter told me we could not take the pie to go, but quickly realized their mistake. So we get the«pies» and leave only to find out later that night that they only boxed up one of them.

This is the best pie in the state of Washington. Wandered in here unintentionally, and ordered a some beer to start off with. After some discussion with my friends, we decided to try the pie here. It was spectacular. We ordered two slices to share — one apple, and one berry. I can’t properly describe how fast we ate them. They were gone before we had time to process. Our server thought it was amusing. Yep, that good. Seriously good pie. Did I say they have good pie here? Next time, and there will be a next time, I’ll order some of this heavenly pie again. I might even try their pizza pie. I’ve heard good things.

Over the holidays, my family and I were excited to go to Hillbottom Pie for pizza and pie in the late afternoon and saw a sign out front telling us that pizza wasn’t going to be served for another 45 minutes. We still walked inside to see if we could wait and was met with a snotty man/employee telling us again that the pizza wasn’t going to be ready for 45 minutes later. He was rude, seemed really irritated and treated us very poorly. I asked if we could get a couple pieces of berry pie to go and was told no, again with no explanation. Even though the pizza and pie are good, customer service goes a long way and we won’t be back. I get the feeling that with all these good reviews, they are getting a little big headed. Just my two cents.

I meant to post a picture but I ate the food too fast. I had soup and house salad, both were amazing! When I saw that the salad dressing had dijon in it I was worried that it would have a slight mustard taste but it did not, instead it was simply delicious. The chicken leek soup was the perfect combination of flavors… I should have ordered a bowl but then I would not have been able to have pie. The very best pie crust I have ever had. My husband and I shared a piece of marionberry pie, he ordered it al a mode. In my opinion, ice cream is not necessary, the pie is excellent without the distraction of the ice cream. If you are looking for tasty simple food, give this place a try.

Absolutely awesome coffee. My son had the clam chowder and I had the mushroom soup= both incredible. Salad was fantastic as well. Did I say their coffee was awesome? And the pies… to die for. This is our new go-to place in PT.

Fabulous experience. One of the best pizzas ever, and I never order sausage or artichoke! Loved every bite. Caesar salad and pumpkin soup were also outstanding. Our waitress was very helpful. A must return.

Best pizza I’ve ever eaten, besides my own Italian families hand rolled dough I grew up on. Tim certainly knows what he’s doing when it comes to food. Everything is perfection. The Cesar salad… those croutons OMG. The pesto pizza with to die for goat cheese… YUM. Unfortunately they don’t take orders for take-out, understandably so because it’s all about the experience and ordering that double shot of espresso that is poured so perfectly it tastes like chocolate at the end of your meal to top it all off. If I could give more than 5 stars I would!!!

Loved this place! It was swamped when we walked in so the service was a tad lacking at first, but quickly got better. We tried a little bit of each thing they offer; soup, salad, pizza, and dessert. We had the clam chowder and I was super impressed, it was creamy, flavorful, and FULL of clams. The bread they serve with it was divine — had to stop myself from eating it all. The Caesar came quickly and I loved it. It’s a classic caeser, really garlicky with crunchy romaine. We ordered the pesto pizza and Christ that was good! The fresh basil pesto combined with gooey mozz and goat cheese, artichoke hearts and roasted red was perfect. I also thought the crust was going to be dense, but it was almost fluffy it’s so airy. Finally the tiramisu– just the best! That’s it. A huge portion smothered in fresh whipped cream and shaved chocolate. Even with ALL that whipped cream, you could still taste the delicious espresso soaked lady fingers. Can’t wait to go back next time we visit Port Townsend.

Excellent 12″ pizzas that have 6 slices per. Feeds 3 people or 1 American. The have the burned-crisp crust style – one I prefer. The ingredients are traditional mixed with non-traditional; sausage and olives. Tasty as hell. Don’t mix the soup/salad with a pizza – you’ll be too full. The pizza takes about 8 minutes, so it is tempted to order more. Get soup and salad if you don’t want a pizza. They push their pies, the dessert ones. I didn’t try one so I can’t speak to it. They appear to have no pineapple or jalapeños. This is very disappointing, but who am I to complain? They know what they are doing on the pizza. Wait staff seems completely disinterested in anything but your most basic needs – and it actually works. Tourist trap towns tend to have those over-the-top-please-tip-me type servers. Here, she only wanted you in and out, and oddly, it just made the meal better.

Hillbottom used to be Tyler Street Coffee. I had been here before for coffee and pie and liked it a lot. This time, we came with my baby in a stroller. The woman who sat us gave us a very chilly reception– we almost left. After I suggested having us sit at a table where he could be in the stroller against the wall, she«let us» sit there without collapsing the stroller. My son didn’t make a peep and slept most of the time. We weren’t in anyone’s way. The café is very nice and the coffee and pie is excellent. But, after our visit today, I’m not sure I would go back. 5 stars for quality but the way they welcome families with children could certainly be improved. Don’t recommend this place if you have children but it’s a good solo or date spot.

Pepperoni pizza the way I dream of it. Crispy and overwhelmingly awesome. The house salad is so fresh and wonderful that I want to take the owners home to Seattle teach a few restaurants the ins and outs of a grade simple salad. Add the laid back vibe and good beer selection and you have a must stop in Port Townsend.

Delicious to say the least, one of my top ten pizza experiences. We started with the asparagus soup, perfectly complimented by toasted bread. The fresh green organic salad appeared just picked. Even though we had the basic margarita pie, the dollops of almond pesto added to the already delicious-ness in front of us. And last but not least. marionberry pie. yum all the way around…

Thanks for a great meal & friendly service last night! The 2 of us shared 3 dishes — the decadent but not too creamy clam chowder, the perfectly thin crusted pizza with(local Washingtonian) Italian Sausage and the very berry-licious Marionberry pie served warm a la mode. Even our beverage pairings of Chuckanut Pilsner and the House Chianti were delicious! We’ll be back on our next visit to Port Townsend!

Mulligatawny soup was just divine! Bean bacon in tomato base superb! Pizzas baked from fresh ingredients to crisp delights… enjoyed with with real Mr. Cola made locally since 1949 for those under and over nice wines and beers! Top it off with pie ala mode .made fresh daily today’s marionberry peach strawberry-rhubarb and blueberry warmed up and with enjoyed with jazz and swing in the background. would definitely come here again when in town!

Let’s cut to the chase, shall we? You love pie, right? If you don’t love pie, then I don’t want to be your friend. So, we’ll assume you love pie, in which case you want outstanding, tastes-like-a-grandma-in-a-flowered-apron-baked-it pie. And that is what you’ll get at Hillbottom Pie. It is extraordinary. They also serve wonderful salads, and the pizza is first rate. But, you’re out of town and no one’s looking, so skip that and just get two pieces of pie. Or three. As for the grumps who are complaining about the service? Maybe so, but when I was there it couldn’t have been more pleasant.
