Vegan and vegetarian gumbo? That’s not something you’ll see all the time. Heck, everything on the menu is at least vegetarian. I swung by late last month while walking around the neighborhood. Brett had already sold out of gumbo by the mid-afternoon. Their website says the gumbo comes with a choice of veggie sausage or country-fried tofu. A small bowl is $ 4 and the large is $ 7. I went with their vegetarian Muffaletta($ 5), which starts with local Dave’s Killer Bread. Green olive salad, roasted red peppers, provolone, and mustard inside. You can also get sub in vegan cheese and/or vegannaise if you wish. it was a delicious sandwich. The tang from the mustard and the briny olive salad worked well for me. The muffaletta here is admittedly a small portion for my gluttonous appetite. Does that mean I get two or three next time? If I’m in the area again, I’d like to try that gumbo. Krissy and Brett also serve mini corn muffins and black eyed pea salad. Very reasonable prices. Several hot sauces found here. Not surprisingly, a few are Louisiana-style sauces. I’d give a solid thumbs up to Lazy K’s!

Great food and a great price! Loved the gumbo and the black-eyed pea salad. Go there often my friends. Brett and Kris(owners) of the Shack are very open and accommodating. Great job and I’m heading back soon.

Man oh Man! Get yourself over to Lazy K’s! The vegan gumbo was ridiculously good! I have never come across vegan gumbo before so I had no idea what I was missing. My husband and were excited to try this new cart and despite the heat, we split a large gumbo and side of corn muffins. It was so hearty and delicious! Sitting in the shade with with a cold drink and hot gumbo was just perfect! We talked to the co-owner Brett about how their menu will be expanding(the cart is only a week old!) with some sandwiches and cooler options and everything sounds delicious! We can’t wait to come back! Welcome to the neighborhood!

This is what Portland vegans has been missing! Seriously — that’s all I could think when I tried Lazy K’s gumbo when they opened at the Mississippi Street Fair last weekend. I’ve never had gumbo before, but I guess that doesn’t matter because this was amazing! Creamy rice and yummy veggies topped with heaps of vegan sausage — YESPLEASE! And a side of moist vegan cornbread muffins with whole kernels of corn — KEEPITCOMING! I heard there are plans to add more items to the menu very soon and I just can’t wait!
