Such great food! In from out of town, went to cartlandia and so impressed by Melt It! Food made right, fresh to order, no frozen meat, all fresh and YUMMY! Great food, sweet owner and great customer service!

The woman who runs this cart is so lovely! And she makes everything MADE TO ORDER! Which is awesome, but be prepared to wait about 15 minutes because of this. I got the lobster Mac & Cheese and it did not disappoint. Fabulous! But beware: this mac and cheese is rich! I almost suggest sharing because neither my boyfriend nor I could finish our portion. Give this place a shot when you’re in Cartlandia. Seriously, the woman who runs this is awesome and the mac & cheese is amazing :)

I’ve tried the Mac and cheese burger, pizza, and seafood medley. All of it was absolutely fantastic… I’ve definitely never eaten anything like it. So original and delicious. And the chef is so passionate about her customers and her food (which is all handmade and her own original recipes)! I highly recommend going to melt it!

TL;DR: Highly recommended for quality and delicious taste of food, professionalism, cleanliness and A+ service!
I ate here twice in late August 2015, two days in a row. The first day I had the mac n cheese pizza and the second I had mac n cheese with bacon.
Both meals were excellent and the service was amazing. The owner and what I assumed was of her daughters were very welcoming and grateful that I choose them. I felt like they truly cared about me as a customer. The cart is beautiful and clean. The whole experience was honestly high class. I never expected this type of experience at a food cart, but now I realize how much I appreciate it.
On to the food! Mac n cheese is a pretty plain food to begin with, but I was highly impressed with the flavors and quality of my choices. I will go out of my way in the future to eat at Melt It again!

I tried this cart after it was included in an article listing some of the best cheese related haunts in PDX. I was mistaken about one of their menu items that thought I had read about in the article. Despite my confusion, the kind lady manning the kitchen made my requested lobster mac and cheese melt and it turned out perfect. My co-​eater got the lobster mac and cheese and it was also delicious.
To boot, they have a nice pair of picnic tables in front of their cart to enjoy whatever cheesy deliciousness you ordered. The Clackamas Cartlandia isn’t my favorite but worth the trip for Melt It.

One of the most delicious things I have ever had the pleasure of introducing to my mouth. I had a mac n cheese calzone and added pepperoni into it. For only $ 8.00 after the addition… this was so reasonably priced. It was huge also! Honestly enough to split as a light lunch or a snack, but you won’t want to. You’ll want to take it away and horde it in a secret cave somewhere and likely get homicidal if anyone tries to steal a bite…
Just please… go there… do your mouth a favor. Feed it something absolutely delicious.
They are cash only, but there’s an ATM at Cartlandia.

The lobster mac and cheese is to die for. It is so creamy and the lobster is not lost in the mix.

Wow, the Lobster roll here is amazing. It was so delicious I had a foodgasm! Debbie, I believe she’s the owner, is also an amazing person who took the time to talk to me and wanted my immediate feedback on what I though of her newest creation. Overall I would definitely recommend Melt It and the Lobster roll to anyone.

I had the Mac and lobster burger!!! It was the first day she put it on her menu. I just have to say it was the most amazing Mac and cheese mixed with Lobster. If I lived in Portland and not in San Diego I would eat all the time. And she is the sweetest lady around. Overall great experience and would tell anyone to eat here :)

OH MY GOD! I had a Mac Attack Burger with Bacon. The beef patties and bacon were cooked perfectly. The mac n cheese is delicious with just enough butter to make it buttery but not overly greasy.
The bun was phenomenal. So soft with an easy bite. There is a wonderful sweetness to the bread.
S’mores sandwich — is really good. Made with Hershey’s chocolate SPREAD and real marshmallows. Topped with Hershey’s syrup and powdered sugar. This is a wonderful dessert.
Funnel Fries — sent me to a higher level of foodgasm — unbelievable. Dough fries with chocolate sauce, raspberry sauce, and powdered sugar. Uh may zing!!!
Yeah I had dessert for my second course.
Number 5 — pasta with 3 meats. This will be my go to from now on. Great portion size (I’m a fluffy) with a bread stick. I don’t want anything else, this is it! This. Is. The. One!!!

I am changing my review they are open today and my husband and I each got the mac attack burger with bacon it has a really flavorful taste and it’s rich and buttery I love the taste of mac and cheese mingling with my burger tasty on a bun :-)
I got the number 5 it came with three meats and I added basil and tomatoes the pasta is rich and creamy and perfectly cooked.
Dessert OMG the funnel fries and s’more sandwich are to die for they are delicious the funnel fries have a chocolate and raspberry topping they are so good and the s’more sandwich is rich and chocolatey.
After eating a lot of everything I was amazed by the skillful cooking and the tasty foods melt it gets 5+++++ stars they are so good and everyone should come and try the food!!! :-)

Amazing food and the lady is great. We ordered a Mac and cheese pizza with bacon and after she made it she thought of another way to make it so we got another one to test out her idea.
She made the second one with bacon mixed into the Mac and cheese instead of just put on top at the end. The second one was amazing, you get a lot more bacon flavor with it mixed into the Mac and cheese.
So when ordering if you want more bacon flavor instead of just as a toping tell her to mix it in for a ultra bacon flavor.

The lady working the cart was so sweet and my bread bowl mac n’ cheese with garlic was AMAZING to say the least. It was filling, not too expensive, and even though I couldn’t finish it I really wanted to because it was just that good. The sourdough bread bowl was perfect and fresh and so easy to tear apart and eat with the cheese! They take credit cards and have sodas/​water and a great selection of fried desserts that I will definitely take advantage of next time!

This place is FREAKING AMAZING! The mac and cheese is unlike any other I have had, sooo rich and creamy. The patty melt is pretty Epic too. The biggest issue I have with this place… I live WAY to close to it. The owner is a very nice kind woman with mad melting skills. If you dont try this place, your life will not be complete!

This place has all sorts of cheesy treats. We got the Mac & cheese pizza. It was great, however, I think something acidic like more tomatoes or more sauce would break up the richness.
The pizza is big enough for two to share. At $ 8, that’s a good deal for dinner.
The woman who works here is always cheerful.
They have cherry limeade now for the summer, yum!

The lady at the stand was very sweet & took her time explaining to me what makes her sandwiches/​burger so good. She even threw in a little more then usual just because.
As, for the food. Today I enjoyed «The cheesiest Mac & cheese sandwich. It was a grilled cheese sandwich with Mac & cheese grilled in the middle. It was superb! I’m glad I moved on from my usual cart at Cartlandia. This sandwich came with a bag of chips too :). You are missing out on one of the yummy cheesy sandwich!

Melt It! Serves mac and cheese in delectable and creative ways. Not only do they serve mac and cheese, but they use America’s favorite pasta to craft burgers, sandwiches, tater tots, and even pizzas. I ordered the mac and cheese burger, and didn’t expect much. I just ordered it for the sake of adding it to my burger blog, but WOW did this place really exceed my expectations.
The lady who was working was kind. One thing that bugged me though, was I was asking her about her burger and it seemed like she as getting mad about it. I was simply asking her what the fat content is of the meat, but she said all she could tell me was that it’s 100% beef but not all ground beef. There were about 4 people who ordered right before me, and I told her I was a bit in a rush. While I was sitting outside the cart she kept telling me how close she was to getting it done, and she was very sweet.
So, the burger. First of all, it comes with a bag of chips and a pickle, and for only $ 6.50 it was actually a solid deal. I only wanted to try this once as mentioned prior for the sake of my blog, but I will admit I will be back for this. The beef patty itself was extremely juicy, delicious and tender. I’m sure it was a high fat content beef but it was sure worth it. The mac and cheese was great, crafted with a penne pasta and a creamy cheese sauce with a hard to distinguish but deliciously cheesy flavor. It wasn’t a very bold or sharp flavor of cheese but It was really well done. Oh, and it was grilled a bit too before topping the burger. I loved the gold and crisp buns that were used, and the aioli spread was a very unique flavor that complement the mac and cheese perfectly. (I enjoyed this burger more than I did the one from Bardo’s Grill, which is a burger cart in the same lot).
I will definitely be back here, and the pizza is very tempting. I’ll have to order that next time, but this burger… I’ll be back for the burger as well.
