So I’m drunk as shit, it’s 3 am, and I’m about to make a taco bell run I will undoubtedly regret later on. I suddenly remember this place exists and fall out of my dd’s car into the best goddamned sandwich I’ve ever had. I had to wait for a little bit as I watched each sandwich in front of me being crafted by hand, and I don’t throw the term«crafted» around lightly. These are not crass gut-bomb sandwiches hastily thrown together but carefully sourced and selected ingredients making sweet love on bread. But I digress. When it was my turn I ordered the porchetta and chatted with I think the owner(again, drunk as shit) about the dearth of real Italian food in Portland and he gave me a tomato the size or a pearl. I tried to talk him into doing an eggplant parm sometime in the future. I took my awesome sandwich home an OH. MY. GOD. It was perfect. The concept of the sandwich is simple but when everything in it is perfect it’s so much more than just the sum of it’s parts. I’m almost bummed at how good this place is because it’s bound to blow up have lines around the block soon. Maybe I’ve exacerbated that by doing this review in the first place but I loved that sandwich so much this is my way of writing him a thank you note. Thank you sandwich man at fancy sandwich place.

Three Pigs is an exceptional little sandwich spot. The owner /chef Ralph has some serious cooking chops having worked at some of PDX’s best fine dining establishments. Now, thankfully, he is working under his own name and citizens and tourists can enjoy gourmet quality meals at an affordable price. He will also make any degree of weird dietary requests without batting an eye(vegetarian, gluten free, whatever) which is quite rare with chefs of his caliber. Ralph is also super friendly and will gladly share his wealth of cooking knowledge if asked for nicely ;)

Perfect little sandwich shop! Delicious, gourmet, unique culinary creations by Ralph and his trusted assistants. Top perk: Fridays and Saturdays they’re open until 4am!!! So when you’re too drunk to make yourself a BLT or broccoli ricotta panini, go see Ralph and the gang for a fix… & not Mickey D’s.

Hold the phone! Five flaming stars with bacon on top! The light was on and I could see the guy inside working. I tugged on the door and it was locked. Damn! Feeling bummed. I did not want to resort to eating spinach and hummus after the crappy day that I had. I wanted comfort food. The guy beckoned to me to wait. Feeling hopeful! He let me in and kindly asked me what he could make for me. I asked him to please make my usual; a BLT and he went to work. How awesome is that? We had a nice little chat about all the herbs that he was mixing up. He has a few sources, including his own garden. The BLT does not come with lettuce on it. It comes with a variety of fresh garden herbs, fresh garden tomatoes and then there’s the bacon. I didn’t get a chance to ask him about the heaping slabs of bacon. Ralph told me his shop is going to be featured in the upcoming Mercury. Watch for the write up and professional photos.
