This is my review from September, 2013, which I input for another Planet Wings location because the Ardsley location was new and was not yet on Unilocal: I just tried the wings at the newly opened PW in Ardsley, NY. I consider myself an good judge of «Buffalo Wings» inasmuch as I spent much time in Bufffalo, NY30 years ago eating them, including at the«Anchor Bar», where I believe they were first served. I have found that most restaurants commit at least one major violation of wing preparation that ruins the wings. Most often it is that the wings are served«WET». That is the problem at PW. My wife ordered one order«plain»(not even on the menu) and one order«hot». The plain wings indicate that PW starts on the right foot: The wings, which they claim to be Bell & Evans and organic, were small(that’s good! Wings that are what my Unilocal colleague Hector V. calls«steroid wings» are awful) and they were fairly crispy(even though they were loaded into a styrofoam box, which, as my Unilocal colleague David S. notes, is a crispy killer). The problem with the plain wings was that they had no flavor. They were not seasoned at all; not even salt.(Clearly the wings are not brined either). The«hot» wings were apparently the plain wings which had been doused in some weird and not even hot«hot sauce». They were soaking wet. The sauce, which had very little flavor, was not a Louisiana style hot sauce(which is usually a vinegar & hot pepper preparation) nor was it hot sauce and butter, as some recipes call for. It had either oil or guar gum or other additives such that it was simply a gloppy red covering on the wings. Apparently, PW’s recipe is to adequately fry up some good quality wings, without seasoning, then kill them any one of 24 ways using«award winning» sauce to drown them. Wings should be well fried and hot hot in temperature, then immediately hit with the hot sauce and shaken within seconds of coming out of the fryer, then exposed to the air so that the water in the sauce comes off as steam, and allowed to DRY. This process allows the hot sauce to dry on the skin, which retains a dry and crisp surface. PW bleu cheese dressing was also tasteless, having been deprived of bleu cheese. The celery was properly cut.
