Only downside is trying to make a reservation. Food, service are so fresh and well prepared! Happy to have a seafood place… finally! Well done Dive!

I have eaten here three times and I have not been disappointed yet. Every time the staff and the food are incredible. First the staff is very friendly and extremely knowledgeable about what they are serving which is really important when it comes to seafood. Our meals have included fresh fish specials, oysters, wonderfully creative side dishes, and excellent cocktails. I would highly recommend seeking out this restaurant when you are near Edwards, Colorado.

Delicious Amazing food! I was here about 1 year ago when it was another concept«eat» and loved it. So when I cam back to Beaver Creek, it was on my list of places to go. Same owners with Dive, new great food! Everything on the menu looked so good, it was hard to choose. Our party loved the crab cakes, brussel sprouts, Cod, Salmon. Every one was a winner! I think only the locals know about Dive. It’s about 5 minutes out of Avon and so worth the drive. GO! We were trying to figure out how to come back for lunch one day, but were told it was only open for dinner. Luckily for us, their sister restaurant/wine-cheese shop downstairs is open for lunch! We went the following day :)

Surprisingly good seafood in the mountains. Great lobster roll and raw bar. Also had black cod in miso and opa. Good happy hour prices too for food and drinks.

Living in Edwards gives you a variety of good restaurants to choose from. One that is off the beaten path and a FAR better value than what you usually expect in the Vail Valley is Dive, formerly know as Dish. I have been there now five times and have not yet been dissapointed in anything at all!!! I usually try to have Scott as my server if I can help it because for some crazy reason, he literally remembers all my silly, picky preferences and tends to all my needs!(Such as bold spicy wines, millions of condiments and aiolis and things to dip my food in which I am so obsessed with.) Service is fantastic, this is one place where you will definitely not find a lazy or uneducated server. Last night I ate in the bar and Travis had to deal with me and he did awesome as well. Didn’t even flinch when I asked for more aioli and refills on my dipping dishes and got them right away! I am super picky and a bit difficult I admit, which is why service makes such a big deal to me and that I get outstandingly at Dive. Onto the food… The oysters… so many kinds! And all so different. I know very little about the different types but Scott helps me pick out a variety and it is pretty awesome to try so many complex flavors. Who knew oysters could taste so different from each other? Had the cioppinno one night which was MORE than enough to split between my daughter and myself and I still had leftovers! Honestly I have never had so much fish and seafood in a cioppinno before, the portion and quality was the best and most generous I have ever had. I did not expect so much«stuff» in it and was super impressed. Tons of yummy shellfish. The mussels are my new favorite. Previously I would go to Zino for them but no more! These mussels cost less($ 8) and taste amazing and… have an amazing garlicky buttery lemon dipping sauce! We might have ordered two orders last night… The brussel sprouts are famous and I never leave without having them as well. The most unique take on brussel sprouts I have ever had, just the right amount of salty and sweet, and umami. Really interesting and you cannot leave without having them. Daughter loves the mashies(buttery good old mashed potatoes) and I also really enjoy the beet salad. Oh, and how could I forget?! Last night I finally tried the crab louie salad and was awestruck. Had to fight my dinner date for it! Yummy, light, decadent, fresh and a soft boiled egg served with it. Outstanding flavors. Homemade chips are great too if you get a side of them. Love it here. Great value, extremely reasonable prices on seafood and high quality delicious unique food! By the way… check out their specials on facebook and you will be pleasantly surprised!!!

Like good Jews, traditionally on Christmas we go out to Chinese food; however, b/c life is hard and we were stranded in Vail, a town where the only Chinese is May Palace, which yes, is a Valley institution, and yes, is pretty gross — and thusly, we decided to shame our ancestors and hit Dive instead — which was actually a wonderful surprise. After a brief kerfuffle with the hostess over seating, we settled into the table at the end of the bar and dove in — sadly they were out of uni so I couldn’t splurge on their uni+avo toast — but I did start w their salmon crudo — bright and fiery, courtesy of the thai chilies kissing each slice of fish — and the little gem salad w marcona almonds was simple and delish. Oh, and a day of skiing necessitates carbo loading, so def order the warm Parker House rolls w sage butter — and try not to cram all of their pillowy goodness into your mouth at once. Entrée winners were the black cod bathed in a delicate dashi, the cioppino, and the squid ink pasta — truly, everything that we tried was pretty great, with an attention paid to detail that can sometimes be forgotten when you eat in Vail proper, as restos often assume that the standard tourist population a) won’t care b/c they are on maxxxxxvacay and yolo and b) be kind of sloshed b/c you get drunkers reallllllll quickly at altitude, so anything goes — as a result, it’s always a treat to get a meal that’s well prepared and reasonably priced. Starters — oysters are $ 3 each, crudos are $ 14, starters are $ 8 – 14, and mains are $ 18 – 40 — I’ll definitely be back as pretty much anyone can find something tasty here — though the only veggie things on the menu are two salads — so perhaps inquire how they deal w herbivores. Also, major bonus points for being situated btwn not one but TWO dispensaries — Rocky Mountain High and New Hope Wellness Center so you can get your edible on if you forgo dessert of the macaron sampler, house tirimisu, or chocolate mousse. OH — the bartender, Travis, is a total gem — sit and the bar and be chatty — you’ll be rewarded handsomely in the booze dept.

We stopped in on a Sunday evening to try the reinvention of Dish, now Dive, and had a really lovely time. The oysters were fabulous, shrimp cocktail with tomatillo cocktail sauce, a new read on Crab Louie and made to order clam chowder were all really wonderful. Small but very interesting wine list was fun(how often to you get to try wine from Macedonia?). The chef sent us a complimentary dish he is experimenting with for the menu that was one of the best things I had ever eaten – a broiled fresh oyster with some sort of magical sauce. We will definitely be back and will tell our friends, eating at Dive is equal measures the comfort of old favorites and the adventure of new dishes.
