One of my favorite restaurants with great service and delicious food. I will so miss this incarnation as the owner has said good-bye to Rio Del Sol and reincarnated it as A Tavola, an Italian Restaurant. I ate at A Tavola for the first time tonight and my experience is promising. Great, tender and truly rare steak with veggies and risotto left me feeling satisfied. Not an every day splurge as the total bill for one person tonight was $ 50.00 including a tip. But well worth the money and great for a special occasion. We used to spend every New Year’s Eve at Rio and are thinking that A Tavala will be the same kind of treat. So sad to lose Rio, but the new place is a hopeful new beginning. Whether it is Mexican or Italian, the folks here do know how to present quality food. Thanks! P. S. Not to the owners: What are our chances to purchase a Rio Cookbook in the future. I don’t know what I’m going to do when a craving for Fish Tacos hits!

We moved to evergreen 3 years ago and avoided Rio del Sol because the menu at the time was typical and overpriced. I had heard they had new management and revamped the menu and sorted out some of the issues other reviewers had mentioned. First off this is NOT tex-mex with things over spiced that you can’t taste the food. This is great Spanish food with mole and ceviche. Our party of 6 all ordered something different so we could taste it all. The pollo mole was yummy, the poblano pollo was super yummy and the carne was done just right. The only complaint was the sea bass was not flown in fresh(which is hard to get in colorado) but it was cooked just right and pretty yummy too. The margaritas were a tad small for the price but very good! The décor is comfortable without pretension. I like the local art and hope they rotate it. The only complaint is that it’s a bit loud. Our service was fantastic! Drinks were filled regularly, table cleared quickly but not hurried. We stayed till closing and didn’t feel rushed out. Bottom line, you won’t find soppapilla ice cream sundaes here, the flan was delicious.

Bland boring food, beans out of a can, nothing seasoned, terrible service. Oh and did I mention to expensive for what you’re getting? Save your money, time, and taste buds. Go somewhere else in town. Worst experience I’ve ever had for Mexican food

The enchiladas verdes were amazing. The guac is too. The green chile is awesome! I wasn’t a fan of the tortilla soup. The carne Asada is okay, but not not traditional Mexican style.

Yep the guacamole still rocks– along with that tomatillo salsa– my favorite! I love the margaritas here too. I find I am picky with margaritas and if the mix is that sickening sweet mix– I don’t like them and prefer a beer. Usually you have to order a higher end margarita to get a good one but here at the Rio Del Sol the house is just the way I like them. I prefer the bar lounge area over the dining room and they have a patio when it’s nice outside. This time I had the Blue Water combo plate. It was just ok– the fish taco wasn’t as good I had remembered. The chile relleno was my favorite– I mean who doesn’t like gooey melted cheese in a fried pepper — right? I could have missed the Shrimp enchilada. The dinner entrée’s I would rate as a 3 however the margs and that awesome guacamole made me up the review to 4 stars. I also like the atmosphere of sitting by the windows in the lounge and watch people walk and drive down the main street Evergreen.

Wishing we could have gotten some of that sol! The patio was sunny, but walking in the main door of the restaurant, you wouldn’t even know the patio/bar a few doors down was connected to the same place! Thinking we were the only ones in the place, we wondered what took so insanely long for the food. The server never said anything so what did we know the patio was bustling. What wasn’t bustling, sadly, were the flavors. Guacamole with red, white, and blue chips was colorful, but bland. Rice, loaded with veggie and herb bits was again colorful, but so bland. The enchilada verde barely had any of the vegetable filling that enticed in the first place and was merely tortillas smothered in sauce and cheese. Fajitas were made to request with tofu subbing in for meat, but the semi melted pile of cheese shreds next to it was a strange one. The quesadilla was massive and enjoyed, but the rest of us just shrugged. Give me sol and give me some of those every-flavor margaritas and I could have enjoyed the food, but without the sun-soaked boozy patio, I’m not sure what this place has going.

Our visits have usually been pretty lackluster, but our most recent visit was far and away the worst experience I’ve had at Rio. The brunch, while it has been alright(never great) on other occasions, was not good, and the service was terrible. The bartender would obviously have preferred a day off, and seemed bothered when pulled away from her cell phone. The food was cold when it arrived, and the portions were pretty small. I ordered bacon with my meal, and though the bartender repeated it back when she took my order, when it didn’t arrive she claimed she hadn’t heard me. Don’t lie, just admit you forgot; it’s okay to forget things. It finally came out after I had eaten all the rest of my meal but I still paid full price. More than once our table of five was completely without beverages, as was the table of three next to us. When those three left, after experiencing similarly terrible service, we watched her roll her eyes at tip they had left. I’m sure she had more than eye-rolling to do when she saw ours. In the time we were there, we watched two tables leave without ordering because the staff was completely unwelcoming and seemed put out that someone had walked through the door. My fiancé’s and my bill was 70 $ for the two of us. The whole table was probably around a 170 $ bill. That’s an awful lot of money for an overall disappointing endeavor. While this was definitely a one-star experience, the extra star is because their happy hour appetizer prices are really awesome, and we have had pretty good food there for dinner on occasion, albeit pricey. The service, however, has almost always ranged from neglectful at worst to awkward at best. I think this may have been the nail in the coffin; no more«give it one more try» visits for us.

Only had take out so this review is just for the food. I had the fish tacos. They were OK. Honestly a little complex for fish tacos. There was a lot going on. The corn relish was a nice touch. My food did look a sloppily put together. My boyfriend wanted burritos but apparently they don’t have burritos or fajitas at dinner? What the hell? Also fairly expensive for what it is… but I’m getting that everything in this town is a little more than the average.

The reason for giving this rating is because of the owner. I’ve only been to Rio once, and it was for happy hour drinks. The margaritas were awesome. Not the over-sweet margarita mix drinks you get at other places. The owner is a great guy who is always open to suggestions to improve his business. Definite staple of downtown Evergreen.

Refreshing, charming and delightful. And that’s just describing the welcoming smile on Taylor our server. We decided to pop in, on an incredibly warm January afternoon, as we are always trying to satisfy our quest for the greatest undiscovered bowl of green chile and that one margarita we can continually boast about and give us a reason to keep coming back. This was our first visit to Rio Del Sol and the minute we walked through the door, there was a warm, social, upbeat feeling. We grabbed a high two-top in the bar area and before we had a chance to settle in, Taylor was there to greet us. Although they have a great selection of margaritas, we always start by trying The House. What a pleasant surprise, it’s served in an eclectic old-fashioned cocktail glass, and it’s almost as refreshing as Taylor’s smile. We split a bowl of the green chile and the chips and salsa, which comes with two flavors of salsa, a red and a green. The red is flavorful and has a nice little spice to it, the green is timid and mild, but has a crisp garden-freshness to it. The texture and color of the green chile looked wonderful, with chunks of pork and melted cheese. We failed to ask if they had different levels of spiciness(rookie mistake). Although we devoured the chile, it should be noted, there were too many portions of dark meat for my wife to fully enjoy, Lucky for me, as it increased my spoonful’s ratio three to one to hers. Looking at the menu, we would love to go back and try some of the diverse and distinct sounding adoptions to Mexican fare, plus just to get another glimpse of Taylor’s smile.

We were looking for some good authentic Mexican on our stop in Evergreen. After ordering our drinks we reviewed the menu we decided to leave. All the meal descriptions had that«we’re trying to be fancy so we are throwing everything in here» feel. The waitress said they are gourmet Mexican, but for the price nothing looked worth a try. We paid for our drinks and bolted.(On the up-side, my Margarita was good!)

Awful… just plain awful. 45 minute wait for drinks, bartenders have bad attitudes. The new owner needs Bar Rescue and a new staff. Food was cold and anything but fresh. Save your money.

Sadly had lunch here after some pretty good happy hours. I think it got bought out. Totally average and frankly expensive. My wife got 4 tiny cocktail shrimp for $ 15 buck? Really? My steak tacos didnt surpass Chipoltle quality Loves the happy hour. Dont like the ‘real’ dining establishment

Rio Del Sol is a great business and a credit to downtown Evergreen. The margaritas are refreshing and tasty and their food is quite good. However, I wouldn’t go to Rio Del Sol expecting authentic mexican, but rather Fine Dining Mexican. I usually just go during Happy Hour, which has heavily discounted margaritas and appetizers, all of which are amazingly good. They have a large variety of quesadillas that are all extremely tasty. I definitely recommend Rio Del Sol for anyone looking for a good mexican dining experience.

I love the fact that this place serves breakfast all day. I ordered my favorite Mexican breakfast, the huevos rancheros. They were really good, although I would recommend that they fry their tortillas to give the dish some added crunch. Our service was a bit slow, but I only saw one server for the entire restaurant area. They also have a bar area and an outdoor patio. The location is great, right in the heart of Evergreen. Overall, I was happy with my experience, and I would come back.

I am a bit puzzled how this place got so many good reviews. My friend and I stopped in after a day of snowshoeing and could not have been treated worse from the hostess/waitress. She literally glared at us when we walked in, though there were only a handful of people eating. Once she seated us, she acted as if she could not wait to get away from our table. I can assure you we did not stink and we were dressed as most hikers/snowshoers are this time of year. We ordered the guac, which was some of the best I have ever had and two salads. The salads were the worst either one of us has ever had and we stopped after about 5 bites. There was not a single comment from our waitress re: the mostly untouched salads and she was very quick to bring out a check — albeit not ours. When we brought that to her attention, her disinterest was palpable. She brought the correct check and we left. As both my friend and I were waitresses in college, she was left a 20% tip despite the bad service and food. What she does not know is we both typically tip 30−35%.
