My friends and I were wandering around town talking about how we wanted a cute cheese shop, and here it is! Great natural cheeses wrapped in front of you, with some other snacks and drinks to go with it. We each got something to bring home, I wish there was one closer to me!

I was on the hunt for cheese one evening. Having just moved here, I used Unilocal to help me find a cheese shop. This place had great reviews and they have a restaurant /bistro, so hey, they have got to be doing well to be running two cheese based establishments. Well… At the cheese shop, the woman behind the counter sold me a pound of what is to my best guess a Comté telling me it was 18 – 24 month old age parmesan. Yeah, right? These two are cheese basics 101. They have two different textures, flavors, and aromas. I should have known when I asked her how long they have been aged and she replied with«18 – 24 months». So which is it? Aged 18 or 24 months? Kind of got a feeling that she was winging it. Just to make sure I wasn’t imagining things, I went to Costco(of all places) to buy a block of 24 month aged parmesan and compare the two. Confirmed: I wasn’t hallucinating. I don’t understand the cured meats in the case either. These are all products that you can purchase online. They are made by companies that distribute nationally if not globally. When I walk into a meat and cheese shop, I want to see house made curing meats hanging from the ceiling and in the case. Not some prepackaged stuff that was shipped here from probably California, unwrapped, sliced up, and sold for some silly inflated price. I wish you would team up with or find some local producers. Okay attempt but a long ways to go.

The wine and cheese was so tasty and awesome, I was almost moved to tears. You can pick out cheeses and meats from an excellent variety. Really great choice of wines. I ordered the white flight, got a nice blend of citrus, herbal, and ripe watermelon throughout the tasting… Paired very nicely with the variety of cheese. My friend ordered the red blend flight. They were all well-balanced and interesting reds, silky textures, very impressed.

Such a fun place, my husband and I stopped to have a light lunch so the meat and cheese plate was the perfect size. Our waiter was very friendly and very knowledgable about all the menu items. I would highly recommend eating and drinking here. The wine selection for the flight was delicious as well!

Wonderful atmosphere, delicious cheese selection, friendly staff. A few things would of made this experience completely on point: –Slightly greater wine selection, although it is cool that you can order a ½ glass –The sushi-style order is effective, but it’s fun to talk through cheese choices with a server –The small plates were a little disappointing… in similar shops I’ve encountered decadent grilled cheeses and mac+cheeses This stuff is all really minor and a bit more personal preferences. Welsh Rabbit really nails what they’re going for. Everything we did have was delicious. And if I lived here, I’d be back!

This little fromagerie is quaint and lovely. It sells a variety of domestic and imported fine cheeses at a reasonable price. My husband brews his own beer and we were looking for cheeses that paired well with what he was brewing. The staff is very informative. I had a cheese I was looking for that I had tried before at a wine tasting. I described it to the lady behind the counter, and she said they didn’t carry that, but had something close. I have to say, she nailed it. They also sell homemade pickles and AMAZING hazelnut sea salt chocolates. Overall, the place is a hidden gem.

This place was fantastic. The cheese was delicious. We had amazingly nice service. The wine was fantastic. The waiter brought over samples of this peach wine that was delicious. We had a cheese plate and it was great. I had the bacon salad and it was great. It was quiet and really nice to sit at. I recommend it.

Super charming and very well-informed waitstaff who knows their cheeses and wines. Prices are great for amazing meats and cheese– nearly half the price of cities i.e. San Francisco where I paid double for the same cheese– Humboldt Fog! Great ambience and so glad that this is in Fort Collins.

We stopped by the Welsh Rabbit Cheese Bistro for a late lunch on a quiet weekday(a few months ago). The staff was very polite, the décor pleasing, and overall the food and wine was delicious. They have a large selection of unique and tasty cheeses(also available in their little cheese shop). We weren’t a fan of the«sushi-style» order sheets and bic pen, but I quickly overlooked that when I excitedly saw Mimolette on the menu. Along with a pasta dish that never arrived, we ordered bread, salami, and chose a smattering of cheeses: soft chèvre, camembert, mimolette, and some kind of semi-hard cheese. These all paired perfectly with a very good glass of red wine — the name of which we wish we’d written down(it was made with Slovenian grapes)! We also tried a glass of the house red, which was tolerable until we tried it with the camembert. A huge mistake — it left the most awful taste in your mouth! Other than this moment, and the disappointing paper napkins(if you’re going to great lengths to be a classy restaurant, use cloth napkins!), we were very pleased with our experience.

If you’re looking for Velveeta slices, you might be disappointed, but if you like real cheese this is a must. Friendly, knowledgable staff with a superb ability to «craft» suggestions to your tastes. Cheeses from around the world include goat cheeses and even water buffalo(my favorite). Buffalo pastrami, a wide variety of salamis and an excellent beer menu complete the cuisine. We tried the party sampler and were blown away by the diversity of flavors, aromas, and textures. Oh how we miss good cheeses in Tucson! They should open one there; we’d be their most loyal customers.

What a beautiful venue. The charm of this restaurant is unbelievable, with a fantastic vibe. We stopped by for lunch on my birthday and had the most wonderful cheese plate. We tried 6 cheese and 2 salamis, with bread and olive oil on the side. The cheeses we ordered were all $ 2 – 3 each, so our bill wasn’t that big. Everything we ordered was delicious! I was completely satisfied and cannot wait to return. I absolutely loved the décor and ambience of this place. The server was super friendly and helpful as well. Because we went mid-day, I didn’t order a wine flight. However, I have heard they are a great pairing for this kind of meal and I can’t wait to return to try it!

The Welsh Rabbit takes my attempts to go vegan, puts them in a full nelson, and leaves them bruised and battered in an alley. The smiling succubus behind the counter sizes me up, proffers a sample of aged cheddar or bleu, and tramples over my self control. The cheese selection speaks for itself, but the staff is what makes this place special. They know their product, and will always recommend similar cheeses to what you already like, helping you find new favorites. Of course, they also know what you’ve already bought, so they can help reunite you with«wait, that one cheese, with the stuff…» Also, I appreciate that they label each cheese with what type of rennet was used. It’s a nice touch from a great store. I’ll be back soon.

Was here this afternoon for s small lunch and wine. Fantastic ! Wanted to come back later for dinner but we are babysitting. Had Bruschetta w apples and melted excellent cheese and Spanish white wine. We asked for the name it was so good ! Sitting at the bar across from the cooking range was getting a cooking lesson with a creative Excellent chef ! He was roasting red peppers to char for tommorow. His wife was very friendly also. My new favorite store in Fort Collins. Gorgeous décor, friendly and helpful staff, and of course… an amazing selection of cheeses and accoutrements! They’ve also just started selling bouquets of beautiful, local wildflowers! Personal favorites: Primadonna, Honey Goat, Oussau Iraty.
