We have been to the Welsh Rabbit multiple times and were very excited about the Great Plates. We decided to go on Tuesday night. What an overall disappointment. We got there about 6:00. The restaurant was relatively busy. There only seemed to be one server on. I don’t know his name but I never have seen him before. Tall guy, curly hair. New? It sure seemed like it. His welcoming was curt, at best. He pointed to a table and basically said sit there. About 5 minutes later he came over with a bottle of water and slapped it on the table. He asked if we had been there before and we said yes, asking about the great plates. He rattled off the offering, stumbling over what it was. We decided to order it. When it arrived, we just looked at it. The server went over it. We asked if it came with anything else and he just said«Ooh yeah» and went and got us crackers. REALLY?! This was an embarrassing plate for $ 25. Some cheese, not even any favorites, and some cold, tasteless chicken or quail thing on the bone. We ate the cheese and salami then struggled to eat the quail. It was impossible to share. Thought this was supposed to be dinner for two people. It was a laughable snack for one. We asked about bread and the already curt server almost rudely responded that we could order some if we wanted. We declined and just decided to eat our substandard food. The server appeared and gave us our check while we were still eating. We paid and left. He never cleared our dishes or even filled our water. What did I tip for? We used to come, get help with our selections, have fantastic service and leave thinking«what a gem». We could not have been more put off. The service was terrible(being nice) and the food was a joke for the price. We will ponder another visit in hopes of redemption. Thank god we didn’t bring guests. It won’t be soon, and it won’t be on a Tuesday. Hopefully on another night there will be a pleasant and helpful server like we have had in the past. I truly hope this isn’t the direction this lovely place is going, or has gone. What a disappointment!

We’ve somehow missed out on this place for several years, but it will definitely be a regular stop for the future! Our mistake was seeing the Cheese Shop’s hours on Unilocal as open until 6 and not realizing that the bistro is open much later. First off, they offer wine flights, which is awesome. These flights seem a little pricey for Fort Collins, but the actual wine is much better than the four other local places we’ve visited with flights. We ordered 4 cheeses and the Napoli meat option. Our favorite cheese was the Honey Chevre, which was on the sweeter side. It’s really fun to have the descriptions and know which cheeses you’re trying. Many other places will list them off quickly and leave you to try and which one was which. We also had the Duck Red Bell Pepper pasta. Neither of us had really enjoyed duck in the past, but this dish was amazing. The flavors blended very well and was a great compliment to our wine tasting. Easily the best wine and small plates experience we’ve had in Fort Collins!

If you love wine and cheese, or beer and cheese, or just cheese, this place is a must! This place is so cool. They have a great cheese menu and you can get olives, meats, crackers or french bread with olive oil and balsamic vinegar to go with it. The perfect place for getting to know your date, or chatting with good friends. Simple, well done little bistro. And if you fall in love with one of the cheeses, they have a shop around the corner, so you can take some home with you.

I’m quite impressed with this place. It is a bit confusing as the store is on one side of the street and the bistro entrance is around the corner. It confused me the first time I came here and saw the store was closed. I almost walked away. I’m glad I didn’t because it turned out to be a fantastic experience. In fact, thanks to this place, I’ve been exploring more cheese lately. The menu does a good job of explaining what each cheese tastes like and the employees are very knowledgeable on not only the cheese, but also what beer or wine to pair with it. They also have great small plates to accompany the cheese. I particularly liked the Bison pastrami. We tried 4 different cheeses in flavor as well as texture. The Honey Chevre… wow! Definitely coming back here!

True love! Get the strawberry rhubarb chèvre and the creamy Danish blue. You won’t regret it! Oh and the Toscano was amazing! This place was surprisingly affordable too!

We were blown away by the smoked duck pasta appetizer in Alfredo sauce. Seriously worthy to take a detour or make an appointment to enjoy. Passionate and friendly staff. Great cheeses, wines, environment, and vibe! Change your plans and fit this place in!

Don’t not go here, the place is horrible. And I am not saying that because I want to keep it all to myself. But man this place is soooooooo good if you like cheese. If you don’t then this place will suck for you. Can’t wait until my next visit.

Love the bistro. My boyfriend and I came in on a Friday night. The server was very prompt and served us our drinks while we waited for the other half of our party. Once they arrived, it took a bit for our order to be taken, but it had gotten busier. Cheese, meets, etc tasted delicious and we had a great time. I recommend the Mt Tan and Truffello cheeses if you like something creamy.

i’m in love. where to begin? what a quaint, quiet, pristine venue for sampling world class cheeses, peasant fare and salubrious wines. the Welsh Rabbit is a little oasis set in Old Town Fort Collins — it appears as if this town has grown up a bit, and is finally ready for a place such as the Rabbit. The staff are incredibly friendly, attentive and extremely knowledgeable. If you have an adventurous palate and are looking for a romantic, serene space to enjoy a savory, light meal or snickity-snack, look no further. And an added bonus? The cheese menu rotates, ensuring you’ll never outgrow the provisions offered. Ask for Michael — his service is outstanding, and I have never received such solid cheese advice and knowledge.

For clarification, there’s the Welsh Rabbit Cheese Shop(established on Unilocal) at 216 Pine, but they’ve also opened the Welsh Rabbit Cheese Bistro at 200 Walnut Street, which is the focus of this particular review. Quaint…cozy…warm…welcoming…all words to describe the Bistro. The three of us settle into a table. Despite the long line that seems to be forming at the hostess stand(and somehow magically being ushered to seating areas hidden in nooks and crannies), our waitress immediately assures us that we should relax and take as long as we’d like in our quest to sample cheeses and meats and wines, oh my! So, from the start, I’m already loving this place that doesn’t make you feel like you need to rush out so they can quickly turn over tables(and tips). My companions and I decide to go with a round-robin approach to ordering, each choosing a cheese and/or meat to order each round. «Do you have honey to compliment the bleu cheese?», I ask. And magically, honey is rustled up as an accompaniment. Sigh. «We especially love these thin, crispy crackers», we comment. And again, magically, another bowl of thin, crispy crackers appear. Double sigh. While I’m pretty set in the way I enjoy my meat/cheese board(honey for the bleu, grained mustard for the meats, a bit of briney olive or pickle for it all, and thin sliced cucumber, onion and tomato with baguette a must), I’m willing to forgive some of my normal expectations. At $ 2-$ 4 per items, when your order arrives, you wonder if you’ll ever manage to get full on those LITTLE samples of heaven. But you do. So you continue to nosh, you continue to sip, you continue to conversate, you continue to relax. Truffello, delish. Honey chevre, definitely. Biston pastrami and loukanika, a must order.
