Coen is a fabulous chef and clearly loves his work. Every time we go to Hilo Bake Co he is there greeting everyone as they walk through the door. If I had to pick just one thing for you to try, it would be the kolaches. They are absolutely amazing and just the right size for a treat. His cream buns and bundt cakes are amazing as well. Recently we purchased an apple pie. One of the best I’ve ever had. Crust was perfect and not soggy on the bottom. Apples were cooked just right and still had a bit of crunch. Yum. If you are in Hilo and don’t want to be hangry, go see Coen and his mom for a delicious snack.

A couple days ago after running around town party prepping and all that, we ended up at Hilo Bake Company just to get something quick to eat. Sorry I don’t have that many pictures cause I was rushing, heehee. My motto for this place is sometimes less is best. I personally think they have the best Maple Bacon Donuts. I’ll tell you why. For some reason their Maple has a subtle sweetness that balances out with the salty crispness of the bacon. Both combine to complement the airy and light texture of the Donut. Other places are just too sweet and overly done with the bacon. That’s just my opinion though. They are open Monday to Friday 6 am to 3 pm. On Saturday from 7 am to 12 noon and closed on Sundays. At Hilo Bake Company, quality is maintained by making small batches at a time. The shop is well kept and clean. Other than the Maple Bacon Donut, they have other baked goods to take care of your sweet tooth or your tenacity for pastries. Don’t just take my word for it… try them out!

The chef is INCREDIBLE! His cakes blew my husband and I away! Everything in his store is baked from scratch and is delicious. We definitely recommend him for specialty cakes, he’s very experienced!

There are not a lot of bakeries in Hilo that make wedding cakes. The first one I contacted was extremely expensive and not very friendly. My caterer recommended that we call this one. Coen was super friendly over the phone and offered very reasonable prices for our small wedding cake(35 people, 2 round tiers of 10″ &8″). We wanted to use our own flowers to decorate the cake and Coen was happy to accommodate this request. He also let me bring in our own platter to put the cake on for an added personal touch. We were planning our wedding from California, so we couldn’t taste the cakes ourselves, but my parents live nearby, so I sent my mom to taste the cake. She paid a reasonable tasting fee($ 5.50) and enjoyed a delicious slice of our requested flavor(white cake with lilikoi filling and vanilla buttercream). On our wedding day, Coen delivered the cake to the wedding site for a modest delivery fee. It looked lovely, and when I finally got to taste it I was so happy. I think there is some tradition about freezing a piece of wedding to eat on your first anniversary, but the cake was so delicious we couldn’t resist eating all the leftovers the next day. Hopefully we can just order another one from Coen for our anniversary! One other note: In all our hectic rushing around before the wedding, one of my favorite relaxing moments was sitting at the picnic table outside the bakery enjoying a maple bacon donut with my soon to be husband.

I really wanted to love this place. Really. Unfortunately, I didn’t. Got here a little after 10:00(they open at 7 a.m. on Saturday). We ordered maple bacon doughnuts, a coconut turnover, an azuki bean cream cheese turnover and a couple of cups of coffee. The maple bacon doughnuts just didn’t live up to their hype. We’ve had fresher, moister ones elsewhere. As for the turnovers, the coconut filling was okay but skimpy; ditto for the azuki cream cheese.

Got there at 6 am and greeted with 3 smiling faces, one of which was the owner, which was awesome so early in the morning. Had to try the bacon maple doughnut as soon as I got there. Was great. Saltiness of bacon complimented the sweetness of the maple topping. Dough was surprisingly light and airy. Definitely a stop when my family and I return to Hilo.

this was my second visit here. the first trip i grabbed a plain donut and coconut turnover — which wasn’t bad. but my second trip was what will probably make me not return… the slice of coffee cake looked big and delicious… boy was i wrong. it was dry and fell apart in my hand and tasted like cornbread. there are better places to crave your sweet tooth.

I don’t know where to start. Let’s just retrace my steps from the moment I entered. I walked in, no one greeted me, which seemed a little odd since there were at least 5 people working, how could you not see me walk in? I was looking at their selection and a young girl came and put those gnarly bacon donuts out, and still didn’t say anything. So I walked over to the counter. I waited a moment before the same young girl walked over and just looked at me, there was no, «hi, what can I get for you?» just a blank stare. So I ordered 2 white glazed sprinkle donuts and a blueberry cream cheese turnover. I’ve had better sprinkle donuts at Safeway, in the evening. The blueberry cream cheese turnover was soggy, tasted like the filling was straight out of a can(it probably was) and there was, at most, a tablespoon of cream cheese. I think what bothers me most is the lack of customer service. I mean, really people. It’s not like I walked in at 5 am(when they open), it was like 7:30! I don’t really like being given the«stink eye» when I’m waiting to order. I’m so not coming back.

Love this place! I found out about their maple bacon donuts through a facebook photo from a friend, and of course, I had to go buy some right away! The place is clean, and one can see them work right behind the counter. Everybody there is super friendly and polite. I love stopping by on random days because the bake goods change, they are not all there every day. Of course a bit more bacon on the donuts would be great, there is not such thing as too much bacon! The cheddar bacon scones are delicious too.

Haven’t actually been to the place but I’ve had donuts from there. Maple bacon & Smores. The maple was too sweet for me but I liked the bacon… They should put more!!! I think people really hyped it up. I liked the smores donut better but it’s basically just a chocolate donut w/marshmallows on it. Couldn’t taste the graham cracker crumbs. Overall aside from the toppings, I liked the donut itself though, good texture & not too sweet. I love that they’re bringing«different» styles to Hilo, but they could still kick it up a notch!

maple bacon? smores? fruit loops? on a doughnut?! the concept, yes. the doughnut itself, not so much for me. i personally prefer a more chewy, doughy doughnut– I found this to be a little more bread-like and a little too sweet. but I love the fresh non-traditional take on bakery goods in hilo. lots of potential for success. I’d like to see more of what this cool little bakery has to offer. like a red velvet cream cheese doughnut or malasada, perhaps ;)
