When I saw that one of Houston’s new must-try food trucks regularly set up shop for lunch on the NW side of town not too far from my office, I excitedly made plans to visit. While the food truck firmament on this side of town is dotted with a million taco truck stars, the 3 Cajun Pigs trailer is the lone red giant, serving up po-boys, boudain, and dirty rice. Just walking up to the trailer in a parking lot off 1960 your appetite is immediately piqued as the smells and smoke from the pit inside the trailer wafts over you like some sort of Native American culinary purification ritual. At the window, I went with the Cajun BBQ pulled pork sandwich on the recommendation of the helpful proprietor. They’ve also got pork loin po-boys, gumbo, a «lunch bucket» filled with brisket or pork, dirty rice and beans, and bayou burgers, which will have to wait for future visits. The BBQ pork sandwich was phenomenal, with the chopped pork bathed in a savory BBQ sauce, topped with a decadent, fried boudain patty. This was all piled high on pillowy soft buns which they get from the local Sweet Mesquite bakery, slathered with a horseradish and garlic mayonnaise. It was messy bliss, and only $ 6. The crispy yet potatoey fries were simply dusted with some Cajun seasoning, but made a nice counterpoint to the sandwich, and were only $ 1 more. There’s no on-site seating yet(that will apparently take some negotiation with the stores that share this parking lot), but this stuff is worth eating in your car, or on a nice day like today, standing and eating off your hood. I’d huff and puff and blow your house down just to get at these 3 Cajun Pigs.
