Once Upon A Taco

We got sweet potato (vegi) tack, fish taco (wild caught cod on the day), and chicken with avocado. Watermelon lemonade. Great light lunch for a hot day!

Absolutely delicious fish burrito with guacamole. Good amount of outside seating so you can eat lunch with your furry friend.

Passed by this food truck during our visit to Hudson, NY. The fish taco is definitely worth getting. However, we also ordered the special Korean Pork taco which lacked in flavor. The chip that was added on the taco was fresh and crunchy. I think they are homemade and you can order the chips with guacamole which was on the menu. The owners were also super nice which made it a thumbs up!

We love «Once Upon a Taco «! We stumbled upon this food truck, while antiquing in Hudson. Great, fresh food. My husband’s favorite is the pork burrito, with the homemade chips & guacamole. I love the sweet potato bowl and the watermelon lemonade. Since finding this gem, we’ve been back several times. The food is consistently great, always very fresh, & so delicious. The owners, Bruce & Deanna, are really great people. They are always accommodating, friendly and can recommend a dish if you’re not sure what to try. You won’t be disappointed! Make this a destination when you’re in Hudson… and there is a cute seating area with picnic tables, too!

Once Upon A Taco was an oasis for me when I visited Hudson. I was tired and wanting a quesadilla. At first I was disappointed not to see that on the menu, but the owner happily offered to accomadate me regardless! She even put sweet potatoes in the deal. I actually went back for a bean and cheese burrito!
I was very impressed how all the meats are free range and local, and all the utensils, napkins, cups, etc are biodegradable.
The crew was so laid back, friendly, and truly seemed to be enjoying themselves.
But no matter what you do… Don’t miss out on the homemade tortilla chips and freshly squeezed watermelon lemonade!

Perfect summertime treat! So glad we caught this «food truck» on a beautiful summer day. We’ve been to Hudson so many times in the past few years but it’s usually been in the colder months so we haven’t had a chance to try this.
On a hot summer day the stars aligned and we were able to partake! Their menu looks delicious and I wish I could try it all at once, but there’s only so much space in my stomach!
I tried the Baja fish taco the fish happened to be a wild cod which was delicious. It was served over cilantro slaw to balance the smoky chipotle mayo. Zen.
I’ve been to Oscar’s in SD (aa-​mazing fish tacos) and I’m pleased to report this come extremely close! Especially considering their location!
5 stars all around, can’t wait to try the Maple lime sweet potato tacos!
