The pizza is great, they have a lot of different options. They also have a lot of different types of drinks. Alcohol, Italian sodas, Regular soda, water, etc.

Don’t come here looking for«American» style pizza. If you want authentic pizza that’s made and cooked properly, Proto’s is the place to go. I wish that I lived closer to them. Hey Proto’s, how about uncooked«To Go» pizzas for those of us with pizza ovens!

Tasty but extremely overpriced. We ordered a medium margarita pizza and a large cheese pizza to go for a family of five. When I picked it up(literally) I had to look inside to verify that they had put food in the boxes because they felt so light. It’s thin crust, and by thin I mean very thin. The large pizza might’ve weighed a pound, including the box it was in. The medium even less. I took it home because my wife had chosen this place to order from. For my family, normally a large and a medium pizza will result in about half a pizza left for leftovers. We ate it all, and were still hungry. The flavor was good, but for the price I expected a reasonable amount of food, which they didn’t provide. I’m not going back.

So overrated and certainly over priced. It’s been a while since I had Protos because ANTHONY’S &ROSALIES are SOOOOMUCHBETTER!!! Had the Atomica, changed black olives for red onions… Hmmm, I’ve been eating pizza for 40 years and I’m not sure I’ve ever had RAW onions on a pizza, are you kidding really, idiots! Then I ask for some sauce on the side to help the bland flavor and under-cooked crust & because they don’t put enough sauce on their pizza to begin with… and she brings me a bowl of COLD sauce… again, really WTF?!? «Can you heat this up please», .‘yes but it will take a few minutes since we don’t have a microwave”… Well I dunno maybe you should have assumed I wanted it heated up since I’m eating hot pizza… SMH at Longmont eateries yet again, gotta move to Denver!!! It’s gonna be a longgg time before I go back there again if at all, OVERRATED!!! Gave 2 stars for good beer selection.

The Annie ia my fave here but it’s not as good as NuYàlk Pizza in Reno. The crust is thin, bland, and usually burnt on the edges. The tomato sauce needs some jazz. Not as absent as Anthony’s but needs help.

The pizza was great. Perfect crust … thin and cooked just right. Very fresh ingredients. We started with the tomato and mozzarella with basil and balsamic. It was simple but so tasty, with just a hint of sweetness from the balsamic, crispy and sweet tomato, creamy and firm mozzarella. We then had the proto pizza with spinach, sausage, oregano, and added mushrooms. Could have eaten that all night haha. Finished with fresh made tiramisu and cheeesecake. Great service, good décor, cold beer. I can’t think of a thing I’d change. Definately go there again.

Protos has amazing pizza! It’s a little on the expensive side, but totally worth it! The dough has the perfect amount of crispiness and softness. The toppings are fresh, and they have many options to chose from. The Caesar salad dressing is wonderful. I love this place!

I LOVE my pizza and am pretty picky when it comes to pizza in the greater Denver area. And Proto’s…is delicious. Stopped into this original location with some friends on the way home from a brewery day. The vibe in this place is so relaxed. It’s small and family oriented, and the staff was extremely friendly! Every employee seemed to be having in-depth conversations with customers. I can only assume that many are loyal regulars. Our waitress spent about 5 minutes telling us the story of Proto’s and entertaining all our random questions. We started with Tomato & Mozzarella –so fresh, ordered a simple sausage & mushroom pizza, and even got dessert. Everything was delicious, but the stand out for me was the pizza. Delicious pizza with quality ingredients.

It was so funny that we stumbled on the original location. I’ve had this pizza in Denver and really liked it. No different this time around. It has a bit of a different vibe because of the clientele but, as far as the food is concerned, the pizza is as good and a good option if you’re doing a brewery tour!

We visited Proto’s for lunch. Good appetizers, good entrées. My wife got a salad and they were willing to customize it to meet her needs. I got a small pizza — I was still hungry afterwards, but this meant I had room for one of their tasty cannoli. Our server was friendly and attentive. I like it and I would eat here again.

Expensive pizza comes amazing pizza! You get what you pay for! Full bar and delicious pizza? This is the spurges for great thin lightly toasted open oven style pizza. Reminds me of old fashioned Me-n-Eds in California

Ate here for the first time today and eek! The pizza was ok. What appeared to be the manager was on the computer(which is right to the side of the pizza oven) and then proceeded to get our pizza dough out of the fridge, without washing her hands. Then she proceeded to be on a very loud phone call right in the dining room. The cook went to the bathroom and didn’t noticeably wash his hands(I hope he did because he started prepping and messing with the food!!) Ber loud talk and chatter amongst the staff made it uncomfortable to eat. Our server was great and attentive but cleanliness and management was questionable! Will not be back

There is Napoletana pizza, and then there is Proto’s. I don’t know where to start. The DOCG Margherita is a lush playground of crushed San Marzano tomatoes and airy buffalo mozzarella with fresh basil dotting the topping. The crust is thin, yet firm and spongy, and quite tasty by itself. With every bite my heart quickened and every mouthful was a a cascade of fantastic flavors perfectly comingled. «D.O.C.G.» stands for Denominazione di Origine Controllata e Garantita, and is a statement of compliance with specifications unique to a product’s origin. This is the standard by which any pizzeria claiming to serve«Napoletana»(Naples-style) pizza is judged, and Proto’s sets the bar so prohibitively high, it almost isn’t fair to other businesses :-) We also got the Pontiff Pie on gluten-free crust, which was a pizza with fresh spinach with cheeses and roasted tomatoes layered on a crust brushed with extra virgin olive oil, and was intoxicatingly delicious. I also pay close attention to the quality of the sides: the mixed greens salad with balsamic vinaigrette had crisp, fragrant baby greens and was adorned with two slices of delicious fresh tomatoes, all on its own so perfect and unadulturated I’d have sworn they picked the ingredients moments before they served them. A bonus: they serve San Pellegrino Limonata also! Descriptions heard at our table: «Shockingly good,» «I can’t talk about how good it is, I’d have to stop eating for a second,» «oh my, I have no words,» and«wow Daddy, this is nummies!» The last one was a kid. They’re very kid-friendly here. Well-sourced original ingredients, perfectly prepared and executed, and friendly, attentive service. I want to go back so badly I almost didn’t leave today. Bravo, Proto’s, you’ve won!

Proto’s is simply great wood-fired pizza at an affordable price. We went without reservations on a Friday night and only had to wait 10 minutes to be seated. Our food was great — their crust is really good; thin, crisp and tasty and not at all«cardboard-y». Our server was friendly and attentive. The only negative I have to report is that I ordered a glass of the malbec and I’m 99% sure that I got the wrong glass of wine… but I didn’t want to insult her by questioning whether or not she brought/poured the right one. Otherwise everything was really good. If we lived closer, we’d come much more often.

Love this upscale pizza restaurant. A variety of pizza for everyone. Great family or date spot. The staff and management are awesome. We were remembered after only one visit. Smallish, but I’ve never had to wait to be seated. The savory panini is fun to try at least once. Happy hour Mon.-Fri. 4−6pm $ 1 off tap beer, wine and cocktails. They have plenty of Lefthand beer on tap or in the bottle, and a decent wine and cocktail selection.

Really? When we came in there were two people nearly done eating — otherwise totally empty. We sat a few minutes before anyone acknowledged us and after ordering sat another five or ten before the pizza was even started. The manager(?) had to actually go in back and tell the guy to you know, start making our pizza? Our pizza came fairly quickly once the reluctant pizza guy got moving but was really disappointing. Our half and half prosciutto/caper and Italian sausage tasted totally pre-fab. Italian sausage not particularly Italian and looked like it came out of a can(how is that even possible??) and the prosciutto/caper combo wasn’t very good. The crust also needed a few more minutes in the oven. All in all, mediocre food, bad attitude toward service, not worth the wait.

We visit Protos often, 2 – 3 times per month. We LOVE the upscale pizza, atmosphere, staff, and location. The pizza is delicious — you can taste the quality ingredients and it isn’t greasy. The staff are so friendly and accommodating. They remember our names and favorite pizzas; they even let our toddler look through the glass at the pizza being made and cooked Try the ‘Traffic Jam’ and ‘Ruby Pie’ — our favorites!
