I ate here every chance I got during Wanderlust this summer. The breakfasts were so delicious with fresh sourdough toast with avocado, sea salt, and egg. The salads were fab, too. I love the friendly folks working there and how they purchase local + sustainably sourced ingredients. Can’t wait to go back again soon.

Food Truck for MTNROOTS @ Truckee Thursday. Let me start by saying I don’t think any food truck can earn a 5 star rating– at least from me. When did become acceptable for a truck in a parking lot wit no tables, waiters or chairs charge as much as a full service restaurant, and I bus my own trash and eat on paper. Ok, got that off my chest. Mexican Street Corn: 2 stars. $ 4 an ear– I could plant an acre of corn for that. Corn was soggy, soft and not that big– the husk made it seem bigger. The cotija cheese and lime were very good and right about of chili powder for zest. Good flavor but not fresh. I’ve had better on the street in LA at 2am for $ 1. From a real Mexican, not a hipster with a mortgage. Just sayin’. Quesadilla with Boar Meat: 4 stars! $ 10 little pricey for a quesadilla but putting Boar on the menu earns a free star. This entrée is what I expect at a hipster mountain town street fair. I ordered it at the pickup window after a Great Pitch from the Prep Cook about wild Boar meat that is soft and flavorful like the finest carnitas(pork for you honkeys) and a little bit like steak. Concur! Not gamey! Tender, pretty moist, with a natural flavor and texture. Standard cheese but plenty of it. Tortilla crispy and cheese melted.

They were out of the pork tacos, but I tried the beef tacos and they were delicious. Liked the radish as a side touch. Tortillas were tasty too. I would go back and try them again.

A food truck at Squaw?! That’s right, and not just any food truck — an amazingly delicious food truck! On an overnight trip to Squaw, I visited the food truck — which was at the time parked right in Olympic Village! I sampled some of the items which were all fantastic and I wish I could have had lots more. I heard they have a different menu for breakfast and lunch. I was there for breakfast and tried the empanadas, yum, yum! Nice and flaky and not dry at all. So flavorful. The dutch pancakes I really can’t say enough about, especially the ricotta ones. You get to pick three(next time I’ll get all three ricotta!). The other two were bacon and maple syrup and something else that I can’t remember, which was also delicious. I have a feeling that any of the available options for the dutch pancakes will be out of this world(so yeah, maybe you shouldn’t get all three ricotta so you can taste the other ones). The staff was friendly and the service was fast. And best of all the food was AWESOME! I’m trying to recruit anyone I can to go to the food truck. Luckily I live just over the mountain, so I can take a day trip over and try more yummy food at the Mtn Roots food truck whenever I can!
