Too often I merely put up with pizza. From mediocre Domino’s to the monstrosity they call flatbread at Seasons 52, it’s been a while since I’ve had a decent slice. Fired Up Flatbread was a pleasant surprise and a wake-up call that yes, fresh, tasty pizza was within arm’s reach! I had the«Olivia» — a white pizza with fresh and dry mozzarella, and added pepperoni. The cheese was delightfully melty; the pepperoni had an amazing aroma and had a bit of a chew to it. The crust was just how I like it — super thin but not overly crunchy, with just the right amount of char. I thought the pizza itself was a decent size for the price. I couldn’t finish it all in one sitting and had to store the leftovers. But most importantly, getting the actual pizza ONLYTOOKTHREEMINUTES. Seriously, the high speed to deliciousness ratio cannot be overemphasized when it’s 38 degrees and you’re ravenous for lunch. I’ll definitely pay another visit to Fired Up Flatbread the next time it comes to Princeton Junction!

I just heard a rumor that this truck was parked behind my office and went to check it out. So glad I did! I got an arugula and prosciutto pizza with fresh mozzarella, shaved parmesan, and balsamic reduction. It was delish! Everything tasted so fresh and the crust was so soft, but with that faint wood smokey flavor and a little crispy on the bottom. I ran back to my office and told everyone they should check it out! Phenomenal fresh baked pizza out of a food truck, and they take credit cards too? Yes please! Come back to Parsippany again soon, guys!
