Shhh… It’s a secret. It’s a cafeteria-ish restaurant in an office building deep within a large office park complex. I’m not saying that there is a conspiracy to keep Wingin’ It a secret, but I don’t blame the workers in this complex for not wanting outsiders to crowd into the small serving/ordering section. Sorry people, but the food being put out here is too good to keep just to yourselves. The restaurant itself doesn’t do much to seek outside customers either — no website with menu and pictures, no signage from the street, very little info leaking out. The only facebook info is a listing of specials for the week. The first I heard about this place was one of my Unilocal friends bookmarking it. She only tripped over the obscure Unilocal listing while searching BBQ on the Eastside. On my first visit, I dropped in just before 1pm on a Wednesday. They had just run out of both specials, so I got the Brisket Sandwich from the menu. It is topped with a jalapeño molasses bbq sauce and comes with coleslaw and a choice of salad or fries. I wanted to try some of their BBQ anyway. The brisket had every bit of the fat trimmed away. Usually this makes it dry, but it was still moist with a smokey, delicious flavor. I still would have liked a little fat left on for added flavor. The coleslaw and fries were excellent. On Fridays, they Facebook the specials for the following week. I noted that Tuesday’s special was Braised Pork Butt, so I put it on my calendar. The Pork Butt was packed with great flavor and it was falling apart tender and moist. Accompanying it was asparagus and potato galette. I love the Friday BBQ Specials. There is powerful cooking going on here.

Although I’ve never actually visited this establishment, I have been fortunate enough to try several of their dishes. Luckily the owner/operator buys supplies at my store, so he’s brought us a few things to try. The ribs were hands down the best I’ve ever had and the chicken bombs were my favorite. This amazing guy is one of the few restaurant/café owners that actually knows how to cook; you will taste the difference. If you haven’t tried it yet, you really need to.

You guys… this … is Redmond’s best kept secret. Secretly hidden in a business park, under the guise of an average cafeteria. But the second you step out of your parked car at lunch time, and you smell that BBQ… –drool-. Jonathan is a grilling genius. If you can make it for his monthly brisket special, for the love of GOD do it. It’s amazing. His BBQ, pulled pork, ribs. hell everything I’ve had has been amazing. He really should have his own stand-alone restaurant somewhere. I use his catering services regularly. He goes above and beyond. There’s always a ton of food, and even leftovers on occasion. His staff is GREAT for catering. Very attentive, clean and respectful. He will work with you on what ever kind of menu you are trying to accomplish. They are there early and clean everything up for a quick breakdown. They pay attention to the smallest detail. Check the place out for lunch one day. You will not be disappointed in the food! Roll through the cafeteria and order at the register. Then wait in the kitchen for your order, or sometimes they bring it out to you.

Wingin’ It claims to serve New American, Asian Fusion, Barbeque, Breakfast, Burgers, Delis, Fast Food. Italian. Mexican, Pizza, Sandwiches, Seafood, Tex-Mex, Vegan and Vegetarian. In very loose terms, that’s true but it varies according to the day. More realistically, you’ve got a grill and a couple of short order cooks who do a pretty good job of mixing it up to provide a varied menu. (I’ll finish this review up when I get a chance… Got to get ready to leave at 4:00AM this morning)
