The Bakers’ Brewery

I’ve been here a few times — the quality & variety of both the food and the beer keep bringing me back, and have overcome the early rough spots. (My initial review perhaps should have been 2 stars, but it’s a solid 3 now.) It’d be easy to just offer the standard brewpub menu of burgers, sandwiches, nachos, and various fried things, but they have inventive offerings underlined by tasty bread: the beer cheese blossom is a great starter, and there are several interesting soups in bread bowls.
The prices are a bit high, but the same is true for most of Summit County. And service can still be a little rocky, but everyone’s nice and try hard.

After a handful of visits, I reckon it’s time for a semi-​useful review.
First, it’s great to get another brewery in Summit County! Not to mention a brewery that knows their way around the Belgian brewing styles.
The good: solid beers, great food & fun atmosphere. For an old Village Inn the interior looks great. The exterior? Well, hopefully with future profits they can update a little. Doesn’t affect the beer or food taste of course so no biggie in the end for me. Just might attract more folks with a different aesthetic.
Beer? Blood Moon Monk is bomber. Can’t recall other brew names right now but haven’t had anything I disliked. They certainly have a good thing going in the beer department. High five!
Food? Honestly better than the well established & much loved joint across the way (Dam Brewery). The Beer Cheese Blossom is fantastic! The wings might be the best in Summit County too, nice fresh veggies on the side make a nice touch. Haven’t tried much else but so far loving the kitchen’s work.
The bad? The service. So far very inconsistent and not altogether the friendliest to be honest. I realize they are probably in startup mode still but it is time to get that part figured out (year anniversary forthcoming). Last time we walked in, we stood at the front waiting to be seated and no one bothered to even say «we will be right with you». Made eye contact with a server a few times (who was training a new server) and nothing. Nada. Zip. Not even a smile.
So we sat ourselves at a hightop near the bar (still not sure if that is open seating or not) and flagged down the bartender to get things rolling.
I didn’t want to turn this into a Dam Brewery vs. Bakers’ review, but they both have some pluses & minuses. I believe the head brewer defected from the Dam and he knows his stuff. Once Bakers’ gets their service issues lined out I’ll probably update the review higher. For now 3 stars (more like 2.5) but the beer & food redeem them for sure.

Ate here on a Sunday night and the food was great! Some unexpected items on the menu that we tried were awesome. Service was very nice and we were taken care of quickly. Overall, great place.

Mountain restaurants for the family rarely focus on quality. The vegetables were fresh and cooked perfectly. The beer is great. We could not ask for more. This place gets packed early and stays packed.

Empty plate club! Nice vibe, good house brews, and tasty food that came out quickly. We had a roast beef sandwich, pork sliders w/​house made bbq sauce, and a kids grilled cheese and a kids buttered macaroni. The only downside was the kids macaroni — pasta was a bit overcooked and not very tasty. The chocolate chip cookie recipe needs some help as well.
Overall a good experience, I’ll be back.

Pretty good food and nice atmosphere. 3 stars because the prices were a bit high and my soup was completely cold. Fish and Chips were ok but there weren’t too many chips. Overall an ok place.

Beer cheese blossom was so good! Staff was friendly but service was slow. I gave it another shot and ordered burgers for take out and it was much faster. Burgers was delish!

We had an awesome time here on the way down from Breck. Great happy hour $ 3 craft beers can’t beat that and the food was unreal their beer cheese blossom was unbelievable and their Mac and cheese with pork to die for ! Great staff and atmosphere.

This relatively new restaurant in Dillon is a-​OK, but it’s clear they’re still trying to work out a few kinks.
The good: The Beer
They were out of their porter, which sounded awesome. So I had a saison, it was refreshing and delicous, one of the best saisons I’ve had. My husband ordered the brown, and it was pretty good. My mom’s boyfriend got the IPA, which was from another brewery. The small selection and presence of outside beers made it clear that they don’t quite have the brewing bit down yet.
The bad: The Service
While our food was decent, our server seemed distracted. He visited our table very intermittently– we sat with empty glasses for awhile and waited a long time for our food.
The ugly: The Heaters
Baker’s Brewery has these ugly heaters set up throughout the restaurant. They didn’t seem to help much, and, considering the location, I think they need to invest in a better solution to keeping out the cold.
Try this place in a few months. Hopefully next time we visit they’ll have all the links figured out.

I rated them with 4 starts only because of the mix of beer and hearty food. It is hard to find a brewery that offers decent food and average good beer après-​ski in this part of Colorado. Sometimes we are so tired that although we appreciate that close by breweries allow you to bring your own food, we just want to sit down, rest and order greasy food. The place itself looks funny since it used to be a Village Inn and one can tell… oh well, they are located right next to I-​70; location, location, location!
This establishment has perfect food for a hard day after hitting the slopes and good beer, not great or excellent, since they just opened. Not only that, their bread is baked sûr place and that’s a big plus (hence the name). I was even tempted to buy one of the shirts that say «Mmmmm…gluten» Loved it!
Will definitely come back. They have good customer service as well and a huge plus, they have big flat screens that are always showing football or sports, I presume. I’ve only been there during NFL season.

Great bar, lousy good. Good news bad news. The bar scene is bomb-​diggity. Great bartenders, really great drinks and drink prices. Beer is fantastic. Hate to have to tell the truth here, but the food was so bad and so over priced it was comical. We MAY try the food again but will def go back for booze and community.

I would not recommend this place for families. It took 45 minutes after we put in our order to get our food. Once the food arrived the Baja tacos were terrible and the shrimp was not fully cooked in the sandwich. They did credit us for these 2 meals, but still would never go back!

The waitress was swamped and the kitchen. It took an hour or more to get our meal and to be asked if we needed our drinks refilled. Coming in we made fun of the negative Unilocal reviews but they were all true. The brussel sprouts were grease bombs, the chicken sandwich was dry, the bread on the roast beef sandwich was soggy, and the butternut squash looked congealed but was tasty. They were trying to please people but it was still a struggle. I also think the heat was out. Last time we came for apps and truly enjoyed our time at the brewery, but this time was a bit rough. The beers are good. Hopefully this was just a busy night and they were overwhelmed.

The food and beers we had were delicious but sadly that’s where the good news ends. Service was terrible– no one came to our table for 15 minutes until we finally asked someone to take our order.
The waitperson we did have was not knowledgeable about what happy hour was (said there were no food speCials when really it was 25% off all apps).
They were out of 2 of the 6 or so beers.
I was hoping it was a brand new establishment and they’d work out the kind but after looking at Unilocal it seems it is just par for the course…

This is a very hard review for me to write. I am a local and I visit this brewery quite often! However, the last time I visited (Dec. 26) was an absolute train wreck. We were seated promptly, and we ordered all drinks and food at the same time. The drinks came out quickly, but the food took 45 MINUTES. When it came out EVERYTHING we had ordered was cold. Our order included French fries and two bowls of beer cheese soup. All of these meals were cold and impossible to eat. Our waitress, Carly, was great and did as much as she could to right the situation, but unfortunately the kitchen staff did not have their stuff together. Even when the «warmed» soup came out, it was so cold it was almost separated. The food was edible, but not pleasurable. Carly was amazing, and this should not be put on her. It’s all the kitchen staff, and they need to figure it out if they want people to come back.

Four stars for the food which was way above bar food. The kale salad and lasagne was really (!) good.
My biggest complaint is was that they seemed about out of every item I tried to order (e.g. Prosecco, venison stew, Brussels sprouts). Plus we sat close to the Brew tanks and it was freezing cold. Desert option consist of cookies (only). I subtract 2 stars for that.

I’m so hesitant to give these guys a great review since, right now, it’s the best kept secret in Summit County… but heck, they totally deserve it!
We discovered Baker’s a few months ago and have been there at least 20 times (granted, it’s walking distance to our home.) Here’s what you get at Baker’s:
1. Reaaaallly great beer. They brew quality beers. What more can I say?
2. Super good food. Some of the best I’ve had in the area. Clearly very fresh ingredients and well balanced flavors. Favorites include the beer blossom (it’ll give me a heart attack but damn is it good), baja boats, burgers (I don’t know what they do, but they are amazing), and their breakfast menu (again, feels like I’m giving away a secret here!)
3. Baked bread and goodies that are just as good as their beer and food (try the vanilla milkshake cookies.)
4. Crazy deals. Their beers are $ 2 on Tuesdays, their happy hour is from 2 – 6 daily, and the deals keep on going.
Highly recommend checking it out if you haven’t!

Very torn, stopped in for drinks so this review only reflects that.
I really enjoyed the beer here as Colorado is full of microbreweries, I stop to try the latest & greatest. Having sold beer, wine & liquor for years I have become a very tame beer snob, the basics of what might have been used to impart the brewers style into a beer he has spent days, weeks or months trying to perfect is all I need.
After asking the bartender twice about the 4 beers on tap specific to this brewery & getting «they’re delicious» & nothing else I gave up.
Having someone at the point of sale working for you & not knowing the basics of your beer at your microbrewery/​restaurant is hugely detrimental.
Print out something she can at the very least hand a customer to read on your beers. There are a LOT of other options out there, separate yourself from them or you’ll drown in your own craft.
4 stars for the beer.

Great to see a new brewery and place to eat in Summit County! The post skiing dinner scene is getting a little too crowded these days.
First and foremost. the beer.well they actually didn’t have any of theirs on tap :(they just ran out of it when we got there. BUT. they did have the awesome Summit Country brewery collab barely wine called Safety Meeting (such a fitting name too hehe) and a number of tasty guest taps. Hopefully next time I am back they will have more of their own on tap.
The location is ideal. right next to the i70 Silverthorne exit. and close to my ski condo rental. Depending on where you sit inside you can have a nice view of the mountains as well. The interior is nicely done and pretty simple. Some TVs at the bar too.
I was very impressed with the food. The portions are massive for the price too (including the sides). I had the meltdown beef sammy. it was very good especially the cheddar jalapeño sourdough bread. For my side I got the potatoes. really good. Our table also split an order of sweet potato fries that were amazing and I dont even like sweet potatoes! One of my friends got the chicken curry salad sandwich. I had a few bites of that and holy crap it is amazing. I am for sure getting that next time I go back.
I thought the service was pretty solid for just opening and being very busy. Overall things didn’t take long and didn’t have any issues. I just wish they had more of their own beer on tap so I had to take a star off.

I’m giving them the benefit of the doubt right now with 3 stars. They have a long way to go, but since it’s opening weekend I’ll go easy.
They only have two of their own taps right now but not brewed on site– partnerships with Kannah Creek and Shine Brewing. Imperial Candy Bar Porter is totally meh. And they have a few guest taps now by Dillon Dam, Telluride, Sanitas, and Avery– a few aren’t even here on opening weekend.
They have a full menu. The «baker» part of this brewery is all homemade breads for their sandwiches, etc. They also have a full bar;didn’t try the food. Long way to go to get to brewing their own beers on site.
If they’re trying to compete with Dillon Dam, they’ve got a long way to go! Space screams of former Village Inn space. But I’ll give them a couple months and come back to check them out again, and will update accordingly.
